People who know me, know that I grew up with a hatred for peas. Like, pick-them-out-of-vegetable-soup hatred. I refused to eat them well into adulthood.

Then, a while back I had the chance to get fresh peas in my CSA box. I always encourage people to be adventurous and try new foods, or foods you think you don't like that are prepared in different ways, so I decided to get them.

I learned that I actually like fresh peas, it's the canned ones I ate as a child that I (still šŸ˜†) dislike. I've also learned I don't care for boiled Brussels sprouts, but roasted? Delicious.

When someone tells me they don't like vegetables, I ask, like, all of them? There are sooo many different veggies with so many different flavors that can be prepared in so many different ways. If you allow yourself to be adventurous, you just may surprise yourself. So, what’s one vegetable you actually enjoy more than you expected?

The other night, I came home after a busy 12-hour shift, hadn’t planned ahead well enough to have leftovers available, and absolutely did not feel like cooking. And honestly? Those are the moments that matter most when it comes to healthy habits.

Because if our routines only work on the ā€œperfectā€ days, they probably aren’t sustainable long term. So here’s what dinner looked like:
šŸš A packet of microwaveable brown jasmine rice that cooks in 90 seconds
🫘 A can of pinto beans
šŸ«™ Herdez Taqueria Street Sauce, Verde flavor
🌿 Cilantro on top

While the rice was in the microwave, I sautƩed the beans with smoked paprika, chili powder, cumin, and garlic powder, then added a little water to make everything saucy. The rice and beans got mixed together, topped with the verde sauce and cilantro, and dinner was done in just a few minutes.

Simple. Filling. Delicious. And it made enough for TWO dinners, which felt like a huge win after a long day.

This is one of the biggest things I’ve learned over the years: healthy eating doesn’t have to be complicated to be beneficial. Sometimes getting more plants on your plate looks less like a perfectly curated recipe and more like using what you already have in the pantry when you’re exhausted. Progress over perfection, every single time.

You don’t need a perfect diet to improve your health.

This statement contrasts with so much of the messaging from wellness influencers these days: NEVER eat these foods! This one fruit will DESTROY your metabolism! Always eat these 5 things if you want a flat belly!

That's just not how nutrition works. And one of the most important ideas I share is this: progress over perfection always wins.

I’ve seen so many people get stuck thinking they have to do everything right before anything ā€œcounts.ā€ But your body responds to what you do most of the time, not what happens once in a while.

What you do 80% of the time matters far more than the remaining 20%. That shift alone can take so much pressure off and actually make healthy habits more sustainable.

One of the biggest barriers to cooking and eating healthier I hear is that it's too hard to fit in to a busy schedule, or when you just don't feel like cooking.

These are valid issues, and if you need to grab takeout, you'll get no judgment from me! I do the same thing.

But, having a few quick, throw-together meals from items you can easily store in your pantry makes it easier when you want a dinner that is more nourishing, or cheaper, than takeout. So I'd love to know, what's your go-to easy meal when you don't feel like cooking?

When I first started learning about Lifestyle Medicine and eating plant-based, I was just trying to feel better in my own body, have more energy, and make sense of all the conflicting nutrition advice out there. And I know many of you are in that same place right now, interested, maybe a little overwhelmed, and just trying to figure out where to begin.

What I’ve learned over time is this: Healthy lifestyle choices don’t have to be ā€œall or nothing.ā€ Even small shifts like getting more plants on your plate can start to change how you feel.

I don’t know about you, but life has felt really heavy lately. Between working shifts at the hospital, holding cooking classes, leading our Walk With a Doc chapter, and spending time with my new grandbaby (all of which I find rewarding), there’s been some overwhelm gradually building up that I didn’t realize at first.

Plus, my hubby has been traveling for work a lot lately, and then of course there’s everything happening in the world right now.

Bill and I had a chance recently to put down all of the work/stress/concerns and just go out and spend time together. And it felt like a weight had been on me that lifted.

The surprise is, afterward, I felt like I had more mental space to focus on work and all of my ā€œspinning platesā€.

This is just a reminder that rest and spending time with people that matter to us are not rewards when we get our work done. They are necessary for our mental health and will help us function with better focus and productivity.
