I haven’t posted many meals lately so here is a good one!

Dump & Go One-Pot Tortellini Soup

**dump it in, let it simmer, and dinner is DONE.** 🙌

This one-pot tortellini soup is:
Super easy — minimal prep + minimal dishes

Satisfying — precooked chicken sausage + cheese tortellini add protein and staying power

Veggie-packed — frozen mixed vegetables + spinach (which I added later and forgot to photograph 😂)

Flavorful — chicken broth + diced tomatoes make a simple but delicious base

Cozy & comforting — because easy doesn’t have to mean boring!

**What I used:**
• Precooked chicken sausage, sliced
• Frozen mixed vegetables
• 4 cups chicken broth
• 1 can diced tomatoes
• Frozen cheese tortellini
• Spinach, added toward the end

Cook the veggies and sausage, then dump the broth, diced tomatoes. Let it simmer for a while and then add the tortellini and spinach. I cooked a little longer for desired consistency.

I love meals like this because nutrition doesn’t have to mean complicated recipes, 15 ingredients, or hours of meal prep! Keeping a few convenience foods on hand—like frozen veggies, precooked sausage, broth, and frozen tortellini—can make it SO much easier to get a balanced, satisfying meal on the table.

Save this one for the next night you have zero desire to cook but still want a yummy nourishing meal 💜

If food was not enjoyable how would that pan out? Think about that for a second? The pleasure and desire is there for a reason… food keeps us alive. Food gives us energy, food makes our bodies feel safe, food increases serotonin and dopamine levels. Food nourishes the body, mind and soul. So yes, we seek it out, most of us enjoy it.

Somewhere along the way, many of us were taught that enjoying food meant we lacked willpower or were somehow “bad.” But the truth is...

You are not bad for liking food. You are human.

Our brains are literally wired to find eating rewarding. It’s how humans have survived for thousands of years when access was more limited. Judging yourself for enjoying food makes about as much sense as judging yourself for breathing air or smiling at a cute baby.

Instead of fighting your biology, what if you practiced trusting it?

When we let go of food guilt, we create space for balanced choices, satisfaction, and a more peaceful relationship with eating.

💛 You don’t have to earn your food.
💛 You don’t have to apologize for enjoying it.
💛 You are allowed to experience pleasure from eating.

Let’s stop moralizing food or ourselves for what we eat. Nutrition vs morals are two totally different things!

Summer dinners just hit different. ☀️🍋

This Trader Joe’s lemon pesto has been one of my favorite seasonal finds. It adds such a fresh, bright flavor to just about anything.

This bowl has:
Gnocchi
Meatballs
Spinach
Trader Joe’s Lemon Pesto

The lemon and basil make it feel light and fresh, while the gnocchi and meatballs keep it satisfying.

If you’re looking for an easy way to add a little summer flavor to dinner, this is a great option. I love making simple dinners more exciting by just changing up the accessories (sauce, veggies, herbs).

I don’t know about you, but crazy heatwaves definitely have me craving cooler, more refreshing foods.

This is pasta salad is such an easy option that makes a TON and can be used as a side or as a main entree. It tastes great and loads in protein, fiber, fats and lots of veggies. You can customize as well!

Here I added:
☀️barilla protein pasta
☀️chickpeas
☀️diced bell pepper
☀️grape tomatoes
☀️cucumber
☀️red onion
☀️feta
☀️my own dressing; basil, evoo, red wine vinegar, lemon juice, maple syrup, oregano, black pepper and garlic.

Other add ins could be olives, egg, chicken, avocado, pistachios or any nut, mozzarella balls, etc.

Laugh, be silly, make mistakes, and don’t make a big deal of it being “exercise”…

It’s incredible, it’s a privilege, our bodies allow us to do cool things. Allow it to be something they do because it’s fun and bonding time vs something the “need” to do!

Part of our summer routine on Fridays is to go to the park and play family basketball. I’m not very good so they get good laughs and I love it.

We are lucky to be able to move, I’m aware it truly is a privilege and I will continue to empower my kids to love how their bodies move, in whatever way that is.

TOFU. 🫣
I know… half of you just kept scrolling.

But hear me out: tofu is not the flavor of the me. Tofu is just… *the canvas*.

You wouldn’t blame plain pasta for being boring, right? Or a naked chicken breast? (Actually… maybe you would 😂)

Tofu is:
✔️ Budget friendly (often under $3)
✔️ Protein packed (also calcium, iron and antioxidants)!
✔️ Quick to cook
✔️ Keeps forever in the fridge if sealed.
✔️ Completely customizable

Sweet? Savory? Crispy? Saucy? Spicy? Air fried? Stir fried? Crumbled into tacos? Blended into a creamy sauce? You get to choose your own adventure.

Think of tofu as the friend with no strong opinions — it just shows up and matches the vibe.

Not a tofu lover? You don’t have to be. But if your only experience was one sad, flavorless cube from 2009… I’m asking you to give tofu a chance again.

Tip: buy it extra extra firm and make sure to get all the water out (I wrap it towels and put something heavy on top).

Remember this when villainizing or glamorizing one food. Or if a new product advertises itself as “the answer.”

Expand your positive, adaptive behaviors and try to focus on that. Steady, consistent shifts can change your constellation in a meaningful way!
