What was on my mind today! Pot Roast! I did not get to take picks of the process as I was interrupted several times for various reasons and a Fire alarm which thank God there was no fire at my apartment complex. So the only pic I had left was our plated serving that we had already started chowing down as it was late and my friend and I were hungry . So sorry about the pic! My Chuck Roast cooked slowly for a few hours after I seasoned it, floured and pan seared in my Dutch oven in olive oil. Added onions , bell peppers, celery , fresh garlic and rosemary. I added beef bullion and always a package of Lipton onion soup mix. The seasoning on the roast was salt, pepper, garlic and onion powder and cumin. I let the roast roast covered in the oven for an hour and a half then added potatoes and carrots. Seasoned the those as well. Covered now with some aluminum foil and then the cover this will steam the veggies let cook for an hour till veggie tender and then remove top and let the veggies brown . The roast will be very tender. I then remove everything to a platter and then make my homemade gravy and serve. Enjoy!
