🇺🇸🔥 Memorial Day Lean & Green Recipe

Grilled Steak & Vegetable Kabobs 🥩🍢

✔️ 1 Lean
✔️ 3 Green
✔️ 0 Healthy Fat
✔️ 3 Condiments

Serves 4

Ingredients:
• 1½ lbs beef tenderloin, cubed
• 8 mushrooms, halved
• 1 zucchini, sliced
• 1 yellow squash, sliced
• 16 grape tomatoes
• Salt & pepper
• 2 cloves garlic, minced
• 1 tsp fresh oregano
• 2 tbsp balsamic vinegar

Directions:

1. Preheat grill to medium-high heat.
2. Season beef with salt and pepper.
3. Build skewers alternating steak and vegetables.
4. Grill about 3 minutes per side or until desired doneness.
5. Mix garlic, oregano, and balsamic vinegar for vinaigrette.
6. Serve 2 skewers per person with vinaigrette over top.
