As someone with Celiac disease, I never want to feel like I’m missing out on life just because of a dietary restriction. After my Celiac Disease diagnosis and completing 2 rounds of the Whole30 program in late 2016, I decided to start my blog called Mary's Whole Life. Here I share real food recipes & ideas, some of my favorite products, and health & wellness tips. All of my recipes are gluten free, and many are Whole30 friendly!

Cheesy Pesto Chicken Bake - the easiest 5-ingredient dinner that takes 5 mins to prep, and tastes like it came from your favorite Italian restaurant! The chicken turns out perfect and juicy every time. Serve with some gluten free pasta and a veggie and watch your family devour 😍

Cottage Cheese Pasta with Spinach & Tomatoes! My mom used to make this ALL the time when I was growing up, and it’s still one of my favorite quick and easy meals to this day! Serve with some grilled chicken, shrimp, or chicken sausage for extra protein, or eat it as-is. It’s comforting, tangy, and packed with fresh summer flavors!
12 oz gluten free spaghetti (I used jovial) or pasta of choice
2 tbsp olive oil
3 cloves minced garlic
12 oz cherry tomatoes, halved
3 cups raw baby spinach
1 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
16 oz cottage cheese
1/2 cup parmesan cheese
Bring a pot of salted water to a boil and cook pasta according to package directions,. Drain and set aside.
Meanwhile, heat olive oil in a large skillet over medium high heat. Add the tomatoes, garlic, salt, pepper, and Italian seasoning. Stir for 5-7 minutes until softened. Add in the spinach and continue cooking over medium heat while stirring, until wilted. Add in the cooked pasta along with another drizzle of olive oil, the entire container of cottage cheese, and the parmesan. Toss to combine, then season with more salt and pepper, if needed. Enjoy!

Perfectly Seared Salmon Caesar Salad - my ultimate girl dinner (with a side of fries - fried in a dedicated GF fryer of course 😜)! I could eat this meal every day for the rest of my life. Not to toot my own horn, but this was better than any restaurant. So easy - I promise you can do it, too!

Perfectly seared salmon:
4 salmon fillets
2 tbsp olive oil
salt & pepper
2 tbsp butter
For the salad:
1 package / 3 heads romaine lettuce, washed and roughly chopped (about 6 cups chopped)
Gluten free croutons, if desired
Remove your salmon fillets from the fridge. Pat dry with paper towels. Sprinkle each one with a generous amount of salt and pepper.

Heat 2 tbsp olive oil in a large cast iron skillet over medium high heat. Make sure it’s nice and hot. Add the salmon skin side down. Cook for 5-6 minutes for 1-inch fillets. Do NOT touch them or move them as they are cooking. Carefully flip using tongs or a metal spatula. Turn the heat to medium. Continue cooking on the flesh side for 3-4 additional minutes. During the last 2 minutes of cooking time, add the 2 tbsp butter to the pan and swirl around so it touches all of the salmon fillets. Remove them from the pan and let them rest on a plate for 2-3 minutes so they obtain their juices.

Gluten Free Magic Bars ✨ aka the 7-layer bars we all grew up loving! I only used chocolate chips, but feel free to throw in the peanut butter chips or butterscotch! These are so nostalgic, ADDICTING, and they also are the easiest no-brainer dessert! I used Simple Mills sweet thins for the crust 😍

FRENCH ONION MEATBALLS ✨ One of my all-time favorite meals. Easy, packed with flavor, and delicious served over mashed potatoes!

Gravy:
2 onions sliced very thin
¼ cup butter
1 tsp salt divided
¼ cup gluten free 1:1 flour I like King Arthur Baking brand
2 cups beef broth
1.5 tbsp gluten free worcestershire sauce
½ tsp dried thyme
¾ cup gruyere cheese shredded
Meatballs:
1 lb ground beef
¼ cup gluten free 1:1 flour
1 egg
½ tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tbsp gluten free worcestershire sauce
¼ cup gruyere cheese shredded

Trader Joe’s GF Sour Cream Coffee Cake Muffins, except made at home!! We don’t live near a Trader Joe’s, so I was determined to recreate these. They’re literal identical - slightly better for you, and so moist and delicious!

VIRAL DUMPLING BAKE made gluten free and dairy free! This could not be easier and it is packed with so much flavor.

What you need:
24 Feel Good Foods Gluten Free Potstickers Chicken or Pork works for this! 3 frozen packages total.
8 oz sliced mushrooms
1 zucchini sliced into half moons
Sauce:
¼ cup Red Thai Curry Paste
¼ cup coconut aminos
2 tbsp sesame oil
14.5 oz canned coconut milk
1 tsp powdered ginger
2 cloves minced garlic
1 tbsp rice vinegar
2 tbsp hot honey or regular honey
Garnishes:
cilantro chopped
green onion diced
chili crunch oil
sesame seeds
