Today's focus is LETTUCE! It may be popping up in your garden already! 🥗

Did you know about 95% of lettuce is water making it a highly hydrating food? Lettuce is low in calories if you are one to count those (I don't - I just focus on nutrient density). Lettuce is a good source of Vitamin A and K. The MOST NUTRIENT DENSE lettuce is romaine (yes , there are higher nutrient greens but we are just talking lettuce today) and the LEAST is iceberg. I love Romaine lettuce as my main lettuce in a big salad and enjoy adding other greens to it and other veggies or fruits.

Do you have any other LETTUCE FACTS to share with us?

This looks like an amazing summer dessert! To make it gluten free, I'd probably use King Arthur Gluten Free Flour.

Today for our Tuesday Tips on Meal Prep - let's talk organization. I know - who has time for that? Well, you do. When you take a few minutes here and there to organize your pantry, your cupboards, and drawers, you will SAVE yourself time later looking for things and therefore less time on meal prep. You don't have to be "OCD" about it, but make sure your spices are lined up in a way to make them easier to find. Keep all your most often used utensils in the same place (I use a crock on my counter for most cooking utensils right above my knife drawer so all my cooking utensils are close at hand). And at least organize your pantry in a fashion where like things are with one another and you know what's in there!

What do YOU do to keep your kitchen organized? Any fun tips some of us may not know about or take the time to do?

I'm curious. What is ONE thing that you ate all the time as a kid, but would never feed your own child?

Welcome Monday!
Time to focus on another 3 healthy habits for the week! Give me some input after you read today's!
1. The first one this week is focusing not just on hydration itself but drinking more WATER and/or CLEAN (no sugar or anything artificial) electrolyte drinks rather than the loaded with sugar drinks many of our population drink throughout the day. I, for one, have always struggled with hydration - and I try to switch back and forth between plain water and water with a clean electrolyte mix added in. I do occasionally treat myself to a Poppi or Ollipop which is at least a lot lower in sugar than the usual 'soda' or 'pop' that is filled with sugar and unhealthy ingredients.

2. Make interactions with friends a PRIOIRTY instead of a 'once in awhile' or 'hardly ever' thing. It has been shown that interactions with friends support health by lowering stress, boosting happiness, and improving self-worth, while also reducing risks of depression. Strong social connections are linked to longer life expectancy and better overall health across all ages.

3. Here's one for the families. Include your KIDS in meal planning and preparation to help foster healthy eating and more quality time together.

What are your thoughts on this week's 3 healthy habits? Is there one YOU would like to focus on this week?
