My photo wasn’t as pretty so I’m using google photos and then my plate at the end.
Ropa Vieja and plantains 😋.
And just threw skirt steak in a crockpot with tomato sauce, beef bouillon, fresh lime juice, and rotel. Let it cook all day then threw a package of Goya Maduro’s sweet plantains in a pan and seared them. All the potassium and protein 💃.
My family loved it, the youngest had two helpings of the ropa vieja!

Ahi tuna steaks seared on both sides in sesame oil in a frying pan, seasoned with lemon pepper and lawry’s, and an Asian chopped salad kit 👌🏻.

Drinking can get creative too! We loooove diet margs. I’ve never been a big fan of all the sugar in triple sec or it’s taste. We actually prefer the diet mix to the regular. And if you’re going to drink at all, tequila or seltzers are your best choices.
