A moment for the GREEN GODDESS salad!!!!

This is often on Suri’s Salads rotation because it’s insanely amazing!!!

Ingredients:
• your choice of greens ( I like to use mixed greens + arugula for this one but kale is yum also)
• roasted broccoli
• quinoa
• edamame
• roasted edamame beans
• pumpkin seeds
• roasted chickpeas

Crisp Snap Pea Salad

•••Fresh, clean, crunchy, easy, light

Ingredients:
• snap peas - sliced into chunks
• edamame beans
• scallions - thinly sliced
• fresh cilantro - chopped finely
• toasted sesame seeds
• sesame oil ( or do half olive and half sesame)
• lemon juice
• agave
• salt pepper
• chili lime spice

••• you can make this is advance and have it sit in the fridge for a few hours

Banana Almond Flour Muffins 🍌🍌🍌

🍌Ingredients🍌
2 large bananas, mashed
1 + 2/3 cups almond flour
2 large eggs
1/2 cup agave
1/2 cup light olive oil
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
Chocolate chips!!!

Mix all your ingredients together.
Bake 350 for 20-25 min

I make everything in a 9* 13 (lined with parchment)
• No mess
• No pots
• No dishes

This recipe was adapted from one that involves sautéing your onions + garlic + mushrooms together in a pan + I’m positive that will taste better but I promise this version tastes super delicious as well.

Ingredients
• 2 onions chopped
• 16 oz of mushrooms chopped - I always use a mixture of baby Bella + white
• 1 bag of shredded carrots
• 1 1/2 cups of brown basmati rice
• 2 cubes of frozen garlic
• 1/3 cup of olive oil
• 2 1/2 - 3 cups of water (you may need to add more later in the cooking)
• salt/pepper
• 1 tbsp dill
• 1 tbsp parsley
• onion salt
• garlic powder
• 1 tbsp coconut aminos

1. Chop your veggies and place all the ingredients in your 9*13 and mix well.
2. Cover and bake in the oven on 350 for 2-3 hours (yes, it takes longer but for me this trumps more dirty dishes and messy kitchen)
3. Check on your rice in the middle, mix it and you may want to add more water if you like the rice softer.

💛 Salmon + Zoodles

💛 Clean eating at its best. Just super fresh ingredients with lemon, herbs + spices to bring out a salmon recipe bursting with intense delicious flavor.

💛 I really believe the key to salmon is all in the catch of the day and how fresh it is from the supermarket. Check the dates!!!!!

1. Lay your salmon on a parchment lined baking sheet and spread the Zoodles around the slices.
2. Sprinkle lemon juice all over the salmon and Zoodles and let it sit for 10 min.
3. I used a combo of spices: salmon rub from Trader Joe’s, salt, pepper, onion salt, dill, thyme, a drop of rosemary, parsley.
4. Sprinkle on some coconut aminos and spray with olive or avocado oil spray.
5. Bake at 425 for 20-25 min (until your salmon is cooked through)

It was time for a new, easy, go-to salmon recipe and this does not disappoint!!!!

Salmon
Fresh lemon juice or any lemon juice
Salt/pepper
Garlic powder
Parsley
Rosemary (not too much)
Thyme
Salmon rub from Trader Joe’s (because I’m scared to make any salmon recipe without this delicious spice)
Olive oil spray

1. Always let your salmon sit in some lemon juice for 10-15 min to get rid of the fishy nessssss
2. Sprinkle on your spices and spray
3. Bake at 425 for 15-20 min (depends on the thickness of your fish and how well done you like your salmon)

Zucchini Carrot kugel (soufflé)

I set out to find an alternative to my typical cauliflower/broccoli/zucchini kugel but with little to zero effort a must.

This did not disappoint!

1. Bag of shredded carrots
2. Box of ZOODLES (in my grocery store we can buy them already zoodled - I take my zero effort very seriously)
3. Salt/pepper
4. Onion flakes
5. Parsley
6. 3 eggs
7. Garlic powder
8. Onion salt
9. 1/4 cup almond flour
10. 1/4 cup olive oil - or just omit and spray with olive or avocado oil spray on bottom of the pan and then on top of the veggies. I sprayed the parchment 😀

A. Preheat oven to 400
B. Line a pan with parchment paper or use an oven to table dish
C. Mix the veggies with the spices and eggs - then add in the almond flour and oil if using
D. Bake at 400 or an hour or longer if you want it more golden

Olive + Slivered Almond Salmon

This week I took a pause from my typical salmon recipe & went wild. It was amazing!!!! That doesn’t mean I won’t be right back to my tried + true next week but I am happy to have found such a delicious alternate option.

Salmon
Lemon juice
Fresh lemons or limes
Salt/pepper
Onion salt
Parsley - fresh or dried
Scallions (optional)
Sliced toasted almonds
Green olives sliced
Trader Joe’s salmon rub (bec I can’t part with that)

1. Sprinkle salmon with lemon juice and add your fresh lemons or limes to the pan
2. Spice it and add your toppings
3. Spray with olive or avocado oil spray
4. Bake at 400 for 20 min

• 6 tbsp light brown sugar
• 1 tsp baking powder
• 1 and 1/2 tbsp avocado oil
• 4 1/2 tbsp water
• 2 tbsp vanilla extract
• 2 eggs
• chocolate chips
• drizzle of agave (optional)

1. Oven 350
2. Mix all the ingredients together
3. Bake on a parchment lined baking sheet
4. Bakes 13-16 min
