Happy World IBD Day! 💜🎗️ On this day, it’s important to remember that Crohn’s disease and ulcerative colitis affect more than just the gut - they can impact your mental health, traveling, your professional life, and your relationships. This can unfortunately make patients feel very isolated and alone, like no one would truly understand what they’re going through. But none of us are alone in this. To the patients: you are seen, you are heard, you are loved, not just on this day, but every day. May you have the strength and courage to continue fighting and sharing your stories with others. And to the families and loved ones: keep showing up, keep supporting and fighting alongside them. 💪🏻

✨ May 17, 2026 ✨ Today marks the 10-year anniversary of my ileocecal resection surgery. I can’t believe it’s already been 10 years. I remember it like it was yesterday. I’ve come a long way since then, both with my diet and in life. I’ve been able to successfully add in different plant-based foods that I either couldn’t have before or was too afraid of trying. I’ve been able to work and travel with relative ease (traveling does take a little extra planning but nothing I can’t handle). I love hiking and summited my first 14-er in 2024. Life is SO good, and I’m proud of where I’m at today. To the version of me in 2016: we made it! 🤍💪🏻

I try to keep my Shop the Kitchen “recipes” open-ended with regards to measurements, so you guys watching these are able to have more freedom of expression and creativity in your meals. Add more of what you want, take out what you don’t. I want to show you what you can accomplish with items that are already in your kitchen, “creating something from nothing” if you will, which is especially important for saving time and money, and for those “I don’t know what to cook” kind of nights (we’ve all been there 😉). Who knew the humble pinto could make something so delicious. 😋🫘🥣 Ingredients: pinto beans, onion, garlic, rainbow carrots, water, olive oil, smoked paprika, onion powder, salt, and black pepper. Equipment: slow cooker.

✨It’s World Mental Health Day ✨ When we think of the word ‘health’, we often equate it with just our physical health - eating gut-friendly foods, getting enough exercise, keeping inflammation in our gut in check, etc. But, while very important, these are simply components of a healthy lifestyle for us. Our health encompasses more than just our physical health - it also means we must care for our mind, emotions, and spirit. IBD is an obviously physical condition, but over time, it can take a mental toll on you. Not only do you have to live with IBD itself, but also the anxiety and depression and stress and other challenges that can come with it. It’s hard sometimes, but I can’t stress making your mental health a priority enough. Our mind is a powerful thing, and does greatly affect our physical wellbeing. Meditation, yoga, taking a walk, getting sunshine on your skin, hiking, gardening, cuddling or playing with your cat or dog, reading, journaling, talking to someone - whatever you do to care for your mental health, treat it like an appointment you can’t afford to miss. Your mental health matters, too, and a sound mind creates space for overall wellbeing.
