I've been in a baking funk these past months which is not like me. I've always said if I am not baking bread then something must be up. The 'something up' has been a very busy work life, which needs some attention to bring back the space for baking. I'd also say finding space in the day for work demands and training has meant baking has slipped to the bottom of the pile.

Like I say to my own clients, you have to be accountable for making changes in your life if you are not happy with it. No one is going to make the space in my life for me to bake again. I am in control of this decision. If you want to create change, then you have to take action.

This post is accountability to myself and a reminder of all the delicious breads I have created (this is only some) over the decades.

My action plan to myself is to make space to bake The Best GF Bread this week. Then, start to tick back off some of these others like a loaf of Gut Friendly Bread and the Fruit Loaf from my cookbook.

So, Jessica, pull your finger out and get that loaf made. One step forward lets to the second step then back into a well formed habit.

After a side salad that feels more robust as we move into cooler weather? Moroccan Eggplant & Lemon Buckwheat Salad is your go to.👇

1 large eggplant
1/2 cup buckwheat groats
2 quarters of preserved lemons, pith removed (or zest of 1 large lemon)
1 tightly packed cup chopped parsley leaves
1/3 cup tightly packed oregano leaves
6 medjool dates
2 tablespoons pine nuts
1 teaspoon cumin powder
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
salt and pepper to season
120g soft goats cheese (optional)

12 years ago walked through doors and changed my life.

I could write all the professional, business owner words that of course would be wishing her the best in everything ahead and praising everything she has brought to JCN. Honestly that goes without saying, but it is only the tip of the iceberg.

I've told Rissy before, she is the "C" in JCN.

Rissy has been my ride or die through every iteration of The JCN Clinic and her passion and belief in wanting to create what we have built together has been my steady rock. Together we have built an industry leading name, decade long podcast and held wellness events that will go down in history.

Behind the scenes we have laughed so hard, shared 'mic-drop' thoughts (she knows what I mean), cried, stressed, cursed (she always takes the trophy on this one) and laughed some more.

The silver lining is friendship goes on. You know that saying – ‘friendship is for a reason, a season of a lifetime’. This friendship is a lifetime.

So, that being said, Rissy I (we) wish you so much happiness in your next steps, whatever iteration they may be. As long as the future you has plenty of time for fishing, camping and time with Bug I know you will be happy.

This is a pretty accurate snapshot of recipes I use on rotation every week/day to day as a clinical nutritionist.

1. Easy Macro Bowl (regular lunch option using leftovers)
2. Tray Baked Vegetables (often make it into the above)
3. Crispy Sage & Anchovy Pork (staple evening meal)
4. Turmeric & Sesame Seed Sweet Potato Wedges (LIFE)
5. Pimped Up Matcha (LIFE EVERY DAY).

Everything is gluten free and dairy free, with a strong focus on supporting gut health so you’ll see meals built with macronutrient balanced focus - quality protein, complex carbs (lots of vegetables & fibre diversity) and fats that help keep energy up and digestion on track.

No extremes, no major fuss or overthinking. Just meals that work with your body.

Honestly, this is why I created e.a.t. To make this way of eating feel easy and realistic.
