PEANUT BUTTER PROTEIN COOKIES

1 cup Peanut butter
1 Large egg
1 Egg white
2 tbs Applesauce
1/4 cup Vanilla protein powder
1 cup Old fashioned oats (use gluten free if sensitive) 1
1/2 cup Baking stevia
1/8 tsp Salt
1 tsp Baking soda
Optional: 2 tbs mini chocolate chips

Preheat oven to 180 degrees. Line sheet pan with foil, and spray with non-stick spray, (or line with parchment paper).

Microwave peanut butter in for 30 seconds, or until softened, which will make it easier to mix. In a medium bowl, mix together the first four ingredients until smooth. In a separate bowl, mix together the rest of the dry ingredients. Combine the wet and dry ingredients together. (Add chocolate chips if desired).

Moisten hands (to prevent from sticking), and roll cookie dough into balls. Use a fork to press a criss-cross into each cookie. Bake 8-10 minutes. Let cookies cool, and enjoy!

PROTEIN BROWNIES

1 cup of Liquid Egg Whites
1 can (200g) of unsalted cooked Black Beans
3/4 cup of Chocolate Protein Powder
1/4 cup of Cocoa
1/4 cup of Agave Syrup,
Calorie-free Chocolate Sauce
3 tbsp Coconut Flour
5 tbsp Cottage Cheese
1/2 tsp of Baking Soda
1-3 tbsp of Peanut Butter (optional but really nice)

Using an immersion blender or food processor, blend all the ingredients together. Bear in mind that what you want to end up with is a thick pancake-like batter. If your batter is too runny, add a tbsp more of coconut flour until it thickens. If it's too thick, add an extra egg white or two.
Once your mixture is perfect—smooth and thick, yet pourable—bake it in a small brownie pan at 160 C for about 45 minutes to an hour, or until an inserted knife comes out clean.

WHAT IS GLUTEN???

Gluten is a protein found in wheat, barley, and rye.
Most of you probably unknowingly love it, because it’s responsible for the elastic texture of dough – i.e. it’s what makes pizza dough stretchy, gives bread its spongy texture, and is used to thicken sauces and soups.
Gluten-free eating has a basis in science, and it does help a genuine health problem. To people with a chronic digestive disorder called Coeliac disease, gluten is truly evil: Their bodies regard even a tiny crumb of it as a malicious invader and mount an immune response to fight it off. This immune reaction ends up damaging the small intestine, which causes both great gastrointestinal distress and nutritional deficiencies. People with celiac disease suffer from a laundry list of symptoms, including diarrhoea, abdominal pain and bloating, weight loss and other symptoms of Irritable Bowel Syndrome (IBS).
Recently, scientists have become aware of another potential form of intolerance called non-Coeliac gluten sensitivity. After consuming gluten, patients with gluten sensitivity may experience many the symptoms of Coeliac disease, but don’t appear to have damaged intestines.

INGREDIENTS

1 Banana
2 Cups Choc Almond Milk (or normal if you do not have)
25g Dark Chocolate Hazelnut Butter
3 Tsp Creatine
1/2 Scoop Pure Whey Protein (Chocolate)

NSTRUCTIONS
1.) Mix all the above in a blender
2.) Pour into your shaker and enjoy this chocolatey delight post-workout, perfect re-fuelling after a heavy sesh!

Here’s a quick and easy white chocolate pudding recipe to fill you up over Christmas. Not a fan of Christmas pudding? No problem. Make this instead!

INGREDIENTS:
200g Canned Pumpkin Puree
1/2 Cup Unsweetened Almond Milk
2 Egg Whites
1/4 Cup Sukrin Sweetener
100g White Chocolate
2 Tbsp Coconut Oil
2 Scoops Pure Whey Protein (White Chocolate)

INSTRUCTIONS:
1.) Mix all the ingredients in a bowl, except for coconut oil and white chocolate.
2.) Melt coconut oil and white chocolate and add that in.
3.) Pour into 6 small dessert bowls and place in the fridge to set.
4.) We put them in the freezer for a little while and they were perfect ice-cream texture!

No-Bake Peanut Butter Cup Bars (Vegan)

Ingredients:

Chocolate Crust:
3/4 cup ground almond meal
2 tablespoons cocoa powder
2 tablespoons pure maple syrup
1 tablespoon melted coconut oil
Pinch of sea salt

Peanut Butter Filling:
1/2 cup creamy natural peanut butter
3 tablespoons pure maple syrup
1 tablespoon melted coconut oil
Pinch of sea salt

Chocolate Topping:
1/4 cup cocoa powder
1/4 cup melted coconut oil
3 tablespoons pure maple syrup

Directions:
Line a standard loaf pan with parchment paper and set it aside. In a medium bowl, stir together all of the chocolate crust ingredients until a moist dough is formed. Press the dough evenly into the bottom of the lined loaf pan, and place it in the freezer to set.

To prepare the filling, you can use the same bowl to stir together the peanut butter, maple syrup, coconut oil and salt. Depending on whether you’re using salted or unsalted peanut butter, you may want to add more salt to taste. Store-bought peanut butter cups are quite salty, so I like to add a generous pinch of salt to mimic that flavor. Remove the crust from the freezer and pour the peanut butter filling over the top, using a spatula to spread it out evenly. Return the pan to the freezer to set.

With Christmas around the corner, everybody want soem coffee and cookies. Well, here is a much healthier version of almond cookies. Your body will thank you :-)

Christmas cookies – Gluten and wheat free

1 stick softened butter
2 cups almond flour
1/2 cup xylitol
1 tsp vanilla extract
1 tsp almond extract
12 whole almonds

-preheat oven 300 deg
-soften 1 stick butter
-add almond flour & xylitol & mix well with a fork
-add vanilla & almond extract & continue to mix
-roll into walnut size balls & place on lightly oiled cookie sheet
-place in oven for 5 min
-remove & press down with fork in a criss cross fashion & place a whole almond in center
-return to oven for an additional 15 to 17 min
-remove from oven & allow to cool before transferring to a rack enjoy :)

Healthy Snickers Bars

A healthier version of the popular candy bar, made with all-natural ingredients!

For the nougat:
½ cup creamy almond butter
2 Tablespoons maple syrup
1 Tablespoon coconut flour

For the caramel filling:
12 soft Medjool dates, pitted (about ¾ cup packed)
⅓ cup water
scant ¼ teaspoon salt
½ teaspoon vanilla extract
1 tablespoon coconut oil, melted
¼ cup chopped peanuts, or other nuts/seeds of choice

For the dark chocolate coating:
1 cup dark chocolate chunks
1 teaspoon coconut oil

Instructions
1. Nougat layer, combine the almond butter, coconut flour and maple syrup in a bowl and mix well to combine. Press the dough onto a baking sheet lined with parchment paper, Place in the freezer to set.
2. To prepare the caramel filling, combine the pitted dates, salt, vanilla, and coconut oil, and and water in a high-speed blender, and blend until completely smooth and creamy. You may need to stop and scrape down the blender a couple of times to make sure the caramel is blended uniformly. Be sure to taste the caramel and adjust the flavor or texture, as necessary.
3. Remove the nougat layer from the freezer and spread half of the caramel filling evenly over the top, using a spatula to smooth.
4. Sprinkle the ¼ cup of chopped peanuts, or other nuts, over the top of the caramel layer, and use your hands to gently press the chopped nuts into the caramel filling. Place in the freezer to set for at least 30 minutes.
5. For the chocolate coating, combine the dark chocolate chunks and coconut oil in a bowl and melt in microwave, until completely smooth and melted.
6. Remove the candy bars from the freezer, and slice into 6 full-size bars.
7. Use a spoon to spread the melted dark chocolate over the tops and sides of each bar, then pick them up to coat the bottom, as well. Return the chocolate-coated bars to the parchment-lined baking sheet, and allow to set in the freezer for at least 15 minutes before serving. The longer the bars set in the freezer, the firmer they get!
8. Due to the nature of this recipe, these bars will melt quickly if left at room temperature. Serve directly from the freezer for best results!
