Black Forest Cake

Ingredients:

Chocolate Sponge:
6 large eggs, room temperature
1 1/4 cup superfine sugar
1/2 cup Dutch-processed cocoa powder
2/3 cup all-purpose flour
150g unsalted butter, melted and cooled
Cherry Syrup:
670g pitted Morello cherries in syrup, drained, syrup reserved
1/3 cup kirsch or cherry liqueur (optional)
1/2 cup superfine sugar
4 tsp cornstarch
Decoration:
4 cups heavy cream
2 tsp vanilla extract
1/3 cup soft icing sugar
100g dark chocolate
12 maraschino or fresh cherries

Directions:

Prepare the Sponge: Whisk eggs briefly, then add sugar and vanilla, beating until voluminous. Fold in sifted cocoa and flour, then melted butter. Bake in lined pans until a tester comes out clean.
Make the Cherry Syrup: Simmer cherry juice with sugar, then thicken with a cornstarch slurry. Add kirsch, then pour over the drained cherries.
Assemble the Cake: Layer sponges with whipped cream and cherries, soaking each sponge with cherry syrup. Cover the assembled cake with more whipped cream and decorate with chocolate curls and cherries.
Chill: Let the cake rest in the fridge overnight to develop flavors and moisten the sponge thoroughly.

Heat oil in a pot.
Sprinkle beef pieces with flour
Sear beef pieces all sides
Add a large chopped onion and continue to braise with meat until brown
Add salt and pepper to taste
1 tsp smoked paprika
sprig of thyme
Add 500ml beef stock and simmer for 40-60minutes on low heat.
Add a punnet of mushrooms and cook for further 10 - 15 minutes.
Add drops of water when required.

Serve with mash or white rice an salad of choice

Salwaaโ€™s โ€œPlaatโ€ Chicken & Mushroom Pie

Salwaa's Cape Malay Cooking

Ingredients:
1 large onion finely chopped
2 TBSP vegetable oil
K**b of butter
2 bay leaves
5 cloves
1 TBSP crushed or grated garlic
Sprig of thyme optional
500 gram mushrooms quartered or sliced
500 gram chicken fillet or deboned thigh pieces cut in bite size pieces or a mixture of both
1 tsp salt
1-2 tsp of black pepper
1 TBSP maizena mixed with a 1/4 cup of water to form a paste

Braise onion in oil and butter until golden brown .
Add, bay leaves, cloves, garlic and thyme and cook for a couple of minutes.
Add chicken pieces, mushrooms, salt and pepper and cook for about 15 minutes. Add water as needed.
To bind your filling add the maizena mixture and cook for a further 5 minutes or so. Add more or less water to the consistency you prefer.
Cool down and fill your pie.

I used about 1 kg of pastry for my oven tray (oond plaatjie).

Bake at 180 degrees celsius for 45 - 50 minutes untill golden brown

Dough Ingredients:
180g cake flour (soft flour)
2 eggs
200g milk
30g sugar
2g salt
30g cooking oil
3g baking powder

Custard Cream Ingredients:

3 egg yolks
300g milk
60g sugar
20g corn starch

Best Beef Stroganoff

Ingredients:
1 lb beef tenderloin or sirloin, thinly sliced
Salt and pepper to taste
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
10 oz cremini mushrooms, sliced
1 cup beef broth
1 cup sour cream
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 tablespoons flour
1/4 cup fresh parsley, chopped (for garnish)
Egg noodles or rice (for serving)
Directions:
Season the sliced beef with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef slices in a single layer and cook until browned, about 2-3 minutes per side. Remove the beef from the skillet and set aside.
In the same skillet, heat the remaining olive oil. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and browned, about 5-7 minutes.
Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to eliminate the raw flour taste.
Gradually pour in the beef broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.
Stir in the sour cream, Dijon mustard, and Worcestershire sauce. Mix well to combine.
Return the browned beef slices to the skillet, stirring to coat with the sauce. Cook for an additional 2-3 minutes until the beef is heated through.
Serve the beef stroganoff over egg noodles or rice, garnished with fresh parsley.

Melt in Your Mouth Chicken ๐Ÿ”ฅโค๏ธ
Ingredients:
4 boneless, skinless chicken breasts
1 cup mayonnaise (can use plain Greek yogurt in place of the mayo)
1/2 cup Parmesan cheese
1 tsp seasoning salt
1/2 tsp black pepper
1 tsp garlic powder
Directions:
In a bowl, combine the mayonnaise (or yogurt if substituting), cheese, and the seasonings.
Spread the mixture on top of each of the chicken breasts.
Place chicken into a baking dish and bake in a preheated oven, 375, for about 45 minutes, or until cooked through. Serve warm!!

Salwaaโ€™s Aatappel Porring / Potato Pudding

Ingredients:
1kg potatoes
175g butter
10 large eggs
1 cup sugar
pinch salt
2 Tbsp cake flour
1 litre milk
1 tsp ground cardamom
1/2 tsp ground cinnamon
few drops almond essence

Method:
Boil potatoes until soft. Drain and mash potatoes well with butter. You could liquidise the potatoes to get a smooth consistency.

In a separate bowl, whisk the sugar and eggs until the sugar has dissolved. Add cardamom, cinnamon, salt and almond essence.
Combine the egg mixture with the mashed potatoes.

Dissolve the flour into one cup of the milk. Stir the flour mixture and the remaining milk into the potato. Mix well.

Pour into a greased ovenproof dish and bake at 180ยฐC for about 45 minutes or until set.
Cool slightly before cutting into squares.
Top with apricot jam or stewed dried fruit.

To make the stewed fruit:
500g mixed dried fruit
2 cups water
1 cup sugar
1 stick cinnamon
2 cloves
1 tsp lemon juice
Add the sugar, water, cinnamon and cloves into a deep pot.
Bring to the boil.
Cook until the syrup is sticky.
Add the dried fruit and lemon juice. Cook a further 10 minutes.
Serve warm with potato or bread pudding.
