Recipe 1: Roasted Butternut Soup π§‘
Serves 6
Ingredients
β’ 1 butternut
β’ 200ml coconut milk
β’ 350ml vegetable stock
β’ 1β2 red onions
β’ 2 carrots
β’ 1β2 bell peppers
β’ 2 tomatoes or 1 cup cherry tomatoes
β’ 1β2 heads of garlic
β’ 1 tsp fresh ginger, grated β optional
β’ Olive oil β to drizzle
β’ Fresh coriander β to garnish
Seasoning
β’ 1 tsp black pepper
β’ 1 tsp ground cumin
β’ 1 tsp paprika
β’ 1 tsp dried thyme
β’ 1 tsp dried rosemary
β’ Chilli flakes or chilli oil β to taste
Method
1. Preheat oven to 200Β°C.
2. Peel + chop the butternut, or cut it in half for roasting. Chopped butternut cooks faster.
3. Add the butternut, onions, carrots, peppers, tomatoes + garlic to a roasting dish. Sprinkle over the seasonings, drizzle with olive oil + toss to coat.
4. Cover with foil and roast for about 1Β½ hours, or until soft + golden. Remove the foil for the last 10 minutes to caramelise.
5. Scoop out the butternut flesh if halved. Blend all the roasted vegetables with the stock + ginger, if using, until silky smooth.
6. Pour into a pot, stir in the coconut milk + warm through gently.
7. Serve with coconut milk, fresh coriander + chilli oil or chilli flakes.
