Chilli Chicken Oil Recipe 🌶️

Ingredients:

3 Cups Red Chilli flakes 🌶️
5 Cloves of garlic chopped fine 🧄
1 tsp hing
Salt to taste
1.5 Cups Chicken breasts & Skin cut in cubes/ optional (already seasoned & cooked)

For the Oil:

2.5 Cups of Oil ( I used sunflower and olive oil)
1 Onion cut in chunks 🧅
2 Bay leaves 🍃
3 Cinnamon sticks
1 Black Cardamom
5 Green Cardamom
2 Star anise
4 Cloves
1 tsp black peppercorns
Sliced Ginger 🫚

Method:

In a large Glass jar add chilli flakes, garlic , salt, chicken and hing.

In a pot heat the oil , spices , onion and ginger.
Make sure the oil is hot enough but not too hot that it burns the spices.
Once all your spices have infused with the oil, remove them with a strainer and pour the oil over the chilli flakes.
The oil will begin to sizzle over the chilli flakes so make sure you stir well so that it’s distributed evenly .

Optional: dice up the ginger that was used in the oil and add it to your chilli flakes.

Allow to cool and refrigerate for at least a week before using for the best results 👌

Delicious Oat & Raisin biscuits

Method

Beat the butter and sugar together until well combined, then mix in the rest of the ingredients .

Next, spray a baking tray with cook and spray.
Use a tablespoon to scoop out the mixture and place onto the tray. (do not flatten the mixture )

Place into airfryer at 180 °C for 12 minutes

Remove from airfyer and transfer onto a wire rack to cool.

Enjoy 🫶

The first two months of the year definitely caught me by surprise
We have been so busy learning and trying new things as well as enjoying (& sometimes not enjoying )every moment at home with the kids that everything else has taken a backseat

Our homeschooling journey is priority at the moment and making sure the kids enjoy learning is the most important thing on my to do list this year!

So that means I have been MIA for a while 🙃

Hi everyone

It’s been a while but we are finally settling in again after a really long holiday.

It is the second day of ‘school’ for our family and we are slowly getting back into routine 😅

My daughter decided to pack lunch this morning for herself and her brothers (which mainly consists of fresh fruit,biscuits and carrot cake 🥕😂)so that saved me some time thinking about what to make.

We will be back to sharing recipes and meals before you know it!!

Yesterday we had a congregation Potjie and 7 different Potjie pots were made as well as homemade pizza😋

Jared cooked Chicken Curry in a size 14 pot so that he would have enough room and feel comfortable cooking a large amount of food

I have personally cooked curry in this pot which fed 50 people

So you can already picture the size👀

I believe Jared fed just over 30 people yesterday and he did a fantastic job ! (The pot was filled halfway)

Monday's are Fun School days!!!

Each week I allow the kids to explore in the kitchen and try something new.

Today they had to follow a simple recipe for ‘Egg in a hole’

Learning safety & hygiene in the kitchen as well as having fun 😄

If you have never tried this simple yet tasty breakfast snack before, you should definitely give it a go!

This is something Jared makes often and we LOOOVE IT😋

Today’s teatime Snack

Cheesy Tuna French Toast

I haven’t made this in quite some time!
It used to be my favourite go to snack when the entire family got together for brunch😋

Ingredients

2 Cans of Tuna (drained)
1/2 Onion (diced)
1/2 Cup Mayo
1/8 Cup Sriracha Mayo
2 Tbsp Chilli garlic Sauce
1/2 Tsp Garlic salt
1 Tsp Fish spice
1 Tsp dried Parsley
1/2 tsp Ground pepper
1.5 Cups of Grated cheddar cheese
6 eggs
1 Loaf of bread
Sunflower oil
Salt & pepper to taste

Method

Beat eggs in a bowl and season with salt & pepper and set aside

Slice off the crust on the bread and roll flat with a rolling pin

Next add drained tuna to a bowl with the onion,garlic salt,pepper,fish spice and parsley. Give it a good mix then add mayo,sriracha & Chilli garlic sauce ( I always add more than just mayo to my tuna and my tuna mixture is different each time I make it, so feel free to use the spice and sauce you prefer)

Add a tablespoon of tuna onto a slice of bread as well as a tablespoon of cheese. (Be careful not to add too much tuna and cheese)
Roll the bread up and submerge into the egg.
Fry in a heated pan with sunflower oil for roughly 2-3 minutes on each side.

If you aren’t a fan of tuna this works well with chicken as well!!
