Simple Lemon Herb Rice 🍋🌿🍚

Ingredients

2 cups cooked rice

Juice of 1 lemon

1 tbsp cooking oil

1 small onion, chopped

1 clove garlic, crushed

Salt to taste

1 tsp mixed herbs (parsley, coriander, thyme, or basil)

Black pepper to taste

Optional: green peas or sweet corn

Method

1. Heat oil in a pan and fry onion and garlic until fragrant.

2. Add the herbs and black pepper.

3. Stir in the cooked rice.

4. Add lemon juice, corn/peas and salt, then mix well.

5. Cook for 2–3 minutes and serve warm with beans, chicken or fish
