👩‍🍳 Vegan Protein Pancakes!

1️⃣ Banana Smash Time 🍌

Pop your banana in a bowl and mash it up until mostly smooth. Chunky bits are welcome 😋

2️⃣ Mix the Dry Squad 🥄

Add:
✨ Protein powder
🌾 Oat flour
✨ Baking powder
🤎 Cinnamon
🧂 Salt
🌱 Flax/chia (if using)

3️⃣ Pour in the Good Stuff 🥛

Add plant milk, vanilla, and lemon juice/vinegar 🍋

Mix until smooth-ish! It should look like thick pancake batter, not cement 😂

💡 Too thick? Add a splash more milk.

4️⃣ Chill for 5 Minutes ⏰

Let the batter rest — the oats and protein powder get thirsty 🥤

5️⃣ Pancake Magic Time 🥞✨

Heat a lightly oiled non-stick pan on medium-low heat.

Spoon in small pancakes (they flip easier 🙌)

🔥 Cook:
⏱️ 2–3 mins first side
⏱️ 1–2 mins second side

Flip when you see little bubbles and the edges look set 👌
