Tahini is one of those foods that doesn’t get nearly enough attention.

Made from sesame seeds, it’s packed with calcium, magnesium, iron, vitamin E, healthy fats and even protein.

I love using it to make a quick dressing with a splash of apple c***r vinegar, garlic and a little water.

It’s a really simple way to add flavour and a huge nutritional boost to salads and roasted vegetables.

Sometimes the smallest ingredients make the biggest difference.

One of the best habits I’ve got into is roasting extra vegetables.

Whenever I have leftover cauliflower, butternut squash or anything else in the fridge, I roast it with a little garlic and keep it in a glass container ready for the week.

It means I can quickly add vegetables to salads, omelettes, lunches or evening meals without having to start from scratch every time.

A little bit of preparation makes eating well so much easier.
