There was a brightness this month and it wasn’t just the sunshine after long rainy days.

Food and comfort can coexist. This is an example.

👀Context : the plate showed at the end was for my son ( not mine - I had more than one aborrajados y more eggs😋)

When you’ve worked on making your dietary patterns of mostly nutrient -dense foods.
There’s no second-guessing or doubt of seeking food for comfort, even if it’s not considered “healthy”.

No I’m not cheating or starting my diet tomorrow because I ate a deep fried food with my breakfast. ( alongside other nutrients)

It just is what it is for this breakfast.

The next meal I put together will be another opportunity to contuine incorporating nutrient-dense foods.

And we keep it moving.

Continuing to make most of my foods nutrient-dense foods. ( if possible )

🤓Reading through research is a skill. Even with AI.

AI may help shorten the mental load of reading through an entire document but the rigor to determine if the study is legit, if it’s ethical, if it’s reputable is all human based.

My explanation is to give you a very simple overview of what goes into researching in science.

We tried Tempeh for the first time.

➡️Let’s talk nutrients first:
3 oz of tempeh
= 18 g of protein
=~160 kcal
=4.5 g fat
=12 g of carbs
= 7 g of fiber

So we have a low calorie , low carb, decent protein, high fiber, gut healthy probiotic alternative to animal protein.

Are we vegan or vegetarian in our house ? No.

Do we love variety and are big foodies? Yes

I made a familiar dish like our nachos salad and used tempeh instead of ground turkey or beef.

SN: did you hear Baby L speaking English 😩. She learned in 5 months!!

The result:
Well my 9 year old ,husband, and I really liked it . The 4 year old , not into it .

I will definitely try to make another dish to see she is into it and just continue to expose her.

Trying new foods doesn’t mean a complete overhaul of what you are already eating. It’s trying and this is one affordable, nutrient-dense option to add variety to your diet.

Thank you for my sweet gift!

I was put on to this company by a friend that has allergies and whose sons also have several food allergies.

My eldest and I love their pumpkin seeds butter. Can you say magnesium, zinc, and fiber!

I just ordered a new jar and a box of bars to try. And they sent me a free jar of vanilla cinnamon sunflower butter ! 🤗

I will follow up after I we do a taste run of this flavor.
