Spiced Salmon K-Bobs - It will quickly become one of your favorite recipes – and so easy!

Ingredients:
2 tablespoons chopped fresh oregano
2 teaspoons sesame seeds
1 teaspoon ground cumin
1 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
1 1/2 pounds skinless salmon fillet (preferably wild), cut into 1-inch pieces
2 lemons, very thinly sliced into rounds
2 tablespoons olive oil

Directions:
Soak wooden skewers for 1 hour.

Prepare grill for medium heat. Mix oregano, sesame seeds, cumin, salt, and red pepper flakes in a small bowl to combine; set spice mixture aside.

Beginning and ending with salmon, thread salmon and folded lemon slices onto 12 pairs of parallel skewers to make 12 kebabs total. Brush with oil and season with reserved spice mixture.

Grill, turning occasionally, until fish is opaque throughout, 5–8 minutes.

Makes 6 servings

What to do with all of that zucchini?
Zucchini Lasagna - Even the kids love it!

Ingredients:
4 medium zucchini
1 lb. ground beef (use turkey for less fat)
2 cups baby Portobello mushrooms, sliced
1 medium onion, finely chopped
2 cloves garlic, minced
1 jar pasta sauce (look for low sugar)
8 oz. tomato sauce
1 tsp dried basil
1 tsp dried oregano
1 tsp fennel seeds, crushed
1 egg, slightly beaten
15 oz fat-free ricotta cheese
2 cups shredded mozzarella cheese

Directions:
1. Preheat broiler.
2. Slice zucchini lengthwise into ¼ inch planks. Spray each side with cooking spray and place them on a wire rack over a baking sheet. Broil for 10-12 minutes on each side or until lightly browned.
3. Reduce oven temperature to 375 degrees.
4. Brown ground turkey, onion, garlic and mushrooms in large skillet. Remove from heat and stir in seasonings, pasta sauce and tomato sauce.
5. Combine egg and ricotta cheese in small bowl.
6. Spread 1 cup of meat sauce into greased 9x13 baking dish. Top with zucchini slices and half of the ricotta cheese mixture. Sprinkle with ¾ cup of the mozzarella cheese. Repeat the process ending with sauce on top.
7. Bake uncovered for 20 minutes. Sprinkle with remaining cheese and bake an additional 10-15 minutes or until cheese is melted.
8. Let stand for 10 minutes before slicing.

Makes 12 servings

Crispy Pork Medallions - With a crispy exterior and a moist interior, these pork medallions are an easy entrée for winter or summer.

Ingredients:
2 tablespoons Dijon mustard
1 (1-pound) pork tenderloin, trimmed and cut into 8 medallions
1/2 cup panko (Japanese breadcrumbs)
1 tablespoon chopped fresh thyme
1 tablespoon minced fresh parsley
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil

Directions:
1. Preheat oven to 450°.
2. Rub mustard evenly over pork medallions. Combine panko, thyme, parsley, salt, and pepper in a large bowl. Dredge pork in panko mixture. Heat a large ovenproof skillet over medium-high heat. Add oil to pan; swirl to coat. Add pork; sauté 2 minutes or until golden brown. Turn pork. Place skillet in oven; bake at 450° for 8 minutes or until pork reaches 145°. Let stand 3 minutes.

Turkey Sliders with Spinach & Feta - Serve as a main entrée or an appetizer – they’re a crowd-pleaser!

Ingredients:
2 lbs ground turkey or ground turkey sausage
2 eggs
2 cloves garlic, minced
10 oz package of fresh baby spinach, chopped
4 oz feta cheese
Salt & pepper to taste

Tzatziki sauce
6 oz plain Greek yogurt
½ c cucumber, grated
1 tsp olive oil
2 tsp white wine or rice vinegar
1 clove garlic, minced
1 tso dill
Salt to taste

Directions:
1. Mix all ingredients for sliders together in a large bowl.
2. Form 24 small patties on parchment paper or foil.
3. Fry patties over medium to medium-high heat in non-stick skillet that has been sprayed with cooking spray. (These take a little heat to brown)
4. Transfer to cooling rack.
5. Serve with Tzatziki sauce.

Makes 8 servings (3 sliders)

Cucumber Dill Salad - Serve up a side of zesty crunch!

Ingredients:
2 medium cucumbers
1 cup reduced fat sour cream
2 Tbls finely diced yellow onion
2 tsp fresh chopped dill
1 Tbls cider vinegar
Salt & pepper

Directions:
1. Peel cucumbers. Slice off ends and discard. Slice in half lengthwise and again into half-moon slices.
2. Combine sour cream, diced onion, dill and cider vinegar in large bowl. Add cucumbers and toss to coat. Add salt & pepper to taste.
3. Refrigerate for 30 minutes to allow flavors to blend. Serve ice cold and garnish with fresh dill.

Spicy Yogurt Grilled Chicken - You control the heat!

Ingredients:
8 oz plain Greek yogurt
2 Tbls sriracha or harissa sauce
2 cloves garlic, minced
Juice from ½ lime or lemon
1 Tbls cumin
1 Tbls tarragon
Salt & pepper to taste
4 (4 oz) chicken breasts

Directions:
1. Combine yogurt, sriracha sauce, lime juice, cumin, tarragon, and salt & pepper in a bowl.
2. Place chicken in shallow dish or in resealable bag. Use ½ the sauce and coat chicken breasts evenly. Allow to marinate in refrigerator for at least 2 hours. (reserve ½ the sauce for serving)
3. Grill chicken over medium-high heat until cooked through – turning once.
4. Serve with green vegetable or salad and extra sauce.

Note: Adjusting the hot sauce to your personal taste does not alter the nutritional information by much.

Bacon & Cheese Squash Boats - Who doesn’t love bacon???

Ingredients:
6 small to medium yellow squash
Salt & pepper
Onion powder
¾ cup shredded Cheddar cheese
4 strips bacon, cooked and crumbled
1/3 cup light sour cream
1 green onion, thinly sliced

Directions:
1. Preheat oven to 350 degrees and spray baking sheet with cooking spray.
2. Cut ends off yellow squash, then cut each in half lengthwise. Place halves cut side up on baking sheet.
3. Sprinkle squash with salt, pepper and onion powder. Top each with an even amount of cheese and crumbled bacon.
4. Bake for 12-14 minutes or until cheese is bubbly and squash has a little bit of give to the touch. Serve with a dollop of sour cream and a sprinkle of green onion.

Note: You may want to scoop a small trough in the squash to create more of a boat.
