Happy National Donut Day! Donut miss out on this delicious & nutritious recipe. 🍩
What You’ll Need:
½ cup almond flower
½ cup buckwheat flour
1 scoop Vanilla Thrilla
1 tsp. baking soda
1 tsp. ground cinnamon
½ tsp. kosher salt
1 cup overripe bananas, mashed
¾ cup nut butter of choice
¼ cup honey
¼ cup milk of choice
1 large egg
½ cup dark chocolate chips
*Optional: ¼ cup chopped raw peanuts
What You’ll Do:
1. Preheat oven to 350 degrees F and grease a 12-cavity mini donut pan.
2. In a large bowl, whisk together all dry ingredients.
3. In a separate bowl, combine your mashed banana, ½ cup peanut butter, honey, milk, and egg.
4. Add the wet mixture to the dry ingredients, and stir until well combined.
5. Pour batter into the donut pan and bake for 14 to 16 minutes, or until a toothpick inserted into a donut comes out clean.
6. Let donuts cool for 10 minutes in the pan before moving them to a wire rack to cool completely.
7. Add ½ cup chocolate chips and ¼ cup peanut butter to a microwave safe bowl and microwave on high for 30-second intervals until the mixture is smooth and melted.
8. Dip donuts into the chocolate peanut butter glaze and sprinkle chopped peanuts on top.
9. Store donuts in the refrigerator until chocolate is set.
