Tofu For The Win!

“Roasted Tofu and Broccoli with Peanut Chili Sauce”

So I’ve gotta be honest. I’ve always quickly turned the page for any tofu recipes ideas I’ve come across (yes, my supreme fun is reading through recipes whenever I have free time!). But I knew in my heart that I had to give this soy wonder a try and guess what?? We (yes my hubby Dr. T too) loved it!! So I’d like you to try this (or the tofu recipe of your choice) just for its amazing taste plus it’s terrific nutritional profile, for it’s a protein powerhouse, low in fat, high in fiber and low in carbs!

Let’s also not forget there’s a treasure trove of health benefits to tofu for it lowers LDL cholesterol, reduces the risk of heart disease, provides all the essential amino acids for bone building, reduces menopausal symptoms AND it’s a cancer preventative, specifically reducing the risk of prostate and breast cancer!

Celebrating National Doctors’ Day in appreciation of the anchor of our practice, Dr. Randy Tobler!

The word appreciation connotes recognizing the full worth of it, so if there was one word to set our doctor apart as exceptional, it’s the word EDUCATION.

Educating our patients is his passion, above and beyond the everyday “doctor” duties. Having our patients understand the “why” of their health choices and current medical condition and with that different suggested medical and lifestyle therapies. And of course, fielding any additional questions is Dr. T’s “jam”!

This is what we’re talking about for that filling fiber that tastes fabulous! This entire pan is what my hubby and I are eating for dinner as our side tonight, along with a protein for the main. Sautéed onions and garlic give you a prebiotic flavor boost. The added nutritional yeast increases your protein count, is good for your microbiome and tastes a lot like Parmesan! And yes I added real bacon bits for extra flavor, but that’s okay because it’s just a small amount that adds so much flavor! Butter beans give it that creamy “potatoey” mouthfeel with that crucial wallop of fiber AND protein that cues into your satiety buttons! This dish for two gives you almost the 1/3th of your targeted daily fiber (target of 30 grams)!

Dinner doesn’t need to be boring on a Monday night!🤣
