Dinner was soooo yummy! Stuffed sloppy jo peppers! I made it up as I went along :) but basically ground turkey, cauliflower rice, sloppy Joe mix and red and yellow peppers! A little cheese on top at the end! 43 grams protein and 25 grams carb! Hit the spot!

Last meal of the day! Accountability post!
5 oz burger made with butcher box ground beef, 1 oz Gouda, cuz.... It's a burger! Served over sauteed baby portabellos, and 4 oz roasted sweet potato ( for a fiber kick) , a side of my homemade pickles (YUM) AND my special Mac sauce made with yogurt base! Roughly 425 calories with 29 grams of protein! Ending my day with a little less than 1425 calories and 144 grams of protein!

Ok I am being completely accountable today! Here is my afternoon snack for this week.. yogurt Fruit snack! I make these on Sunday and have one a day this week. They pack a full 11 grams of Fiber! I use the frozen berry trio (raspberries, blackberries and blueberries) I put yogurt and chia seeds in with cinnamon and mix well, place frozen berries on top and refrigerate! It is so cold and refreshing!

Today so far my calories are 967 and 115 grams of protein!

Lunch for today ...staying on this high protein theme... Paula Cushman inspired me with her chicken salad so here is my version :)
56 Grams of protein! If I can finish it!

5 oz chicken breast
2 celery stalks chopped
1 large cup shredded cabbage (purple and green)

Dressing:
1/6 cup fage ff yogurt
1/6 cup 2% cottage cheese
OR 1/3 of either... I just wanted the flavor of both.
2-4 tablespoons buffalo sauce, (I use primal kitchen)
Organic ranch seasoning - DELISH (sodium and chemical free!)
blended smooth and poured on top!

Calories: ~348
Protein: ~56 g
Fat: ~7 g
Carbs: ~11 g
Fiber: ~2.4 g
Net carbs: ~8.6 g

Really trying to get clean protein and probiotic at each meal. This week I am keeping it simple and everyday for breakfast I am having 1 egg, 1/2 cup egg whites and half cup cottage cheese with live cultures! It is so filling . Today I added 1/2 tablespoon of Dijon mustard to my eggs.. 1) it gives them a little color and punch of flavor, but mustard also have many benefits..

-helps digestion and nutrient absorption
-flavor without insulin spike
-mustard seed has anti inflammatory compinds and helps cleanse the liver
-Tastes delish!

I also add a cup of spinach for a little fiber bump with minimal calories!

This was so filling. I couldn't finish it! 33 grams of protein to start the day! 1 local egg from my sweet friend Malu, 1/3 cup egg whites , 1/4 cup cottage cheese with everything bagel seasoning, about 2 oz of sweet potato with a cup of sauteed kale and maters! Yumo!

Still feeling icky..but know I need to get protein in! For breakfast today I made 1 egg and 2/3 cup egg whites, scrambled. 1/2 cup cottage cheese with everything bagel seasoning and roasted sweet potatoes that I made earlier in the week. Warm and satisfying with a nice punch of protein. I am also sipping a ginger green tea and hoping to feel better by lunch!! Sorry the pics are not fancy :) I work from home , so I'm eating at my desk!
