Why doesn't one cup always equal the same weight? Why does measuring vegetables by the cup can get confusing when you switch to weighing them?
A cup measures volume (space), not weight:
That means:
A cup of spinach weighs much less than a cup of broccoli
A cup of cucumber weighs differently than a cup of green beans
Different vegetables contain different amounts of water, fiber, and density.
That's why we use grams and ounces to equal 1 cup. It's a simple and consistent way to measure portions without having to weigh every vegetable.
When you're tracking your servings of vegetables, be careful. You may accidentally eat more or less than intended simply because not all vegetables weigh the same. It may cause unintentional weight gain or plateauing.
