The Sweet on Sweet potatoes!
Try this recipe this holiday season or any time of the year

Garlic Mashed Sweet Potatoes
4 medium sweet potatoes peeled and cut into even size chunks
4 garlic cloves
½ C palm shortening (you can use coconut oil or olive oil)
1 tsp salt
¼ C parsley (or chives or any fresh herb)

-Add sweet potatoes and garlic cloves to large saucepan and cover with water
-Bring to a boil then reduce heat to simmer until sweet potato is tender
-Drain water and either place sweet potatoes and garlic in high-speed blender, food processor or back in pot and mash'
-Mix in shortening salt and parsley
-ENJOY

A Must Try Roasted Garlic and Artichoke Hummus

Here is a easy delicious and healthy snack great for snacking during football and a different appetizer for the holiday Vegan and AIP friendly too!

1 14oz can of artichoke hearts packed in water
1 small head of garlic
1 Tablespoon lemon juice
3 tablespoons olive oil
Sea salt to taste

Preheat oven to 400 degrees. Cut off bottom of garlic head so you can see the cloves.. place on foil and drizzle cut side with olive oil. Wrap loosely in foil and roast for 20-30 minutes until easily pierced with a knife and start to brown.
Let cool and press liquid out of artichoke hearts and place in a food processor, or high-speed blender. Add roasted garlic cloves (no skins, just squeeze till garlic comes out.. it will be very soft) Take remaining olive oil and lemon juice and salt to taste and blend. Add additional lemon juice or salt as desired
Serve with veggies, pita chips (or cauliflower chips for AIP)
