Ingredients:

For the Salmon:

1.5 lb salmon, skin removed, cut into 1-inch cubes
1 Tbsp. minced garlic (~3 cloves)
2 Tbsp. honey
2 Tbsp. low-sodium soy sauce
1 tsp. olive oil
1.5 tsp. fresh lemon juice
3/4 tsp. paprika
1/2 tsp. black pepper
Optional: pinch of red pepper flakes

For the Sides:

2 cups cooked brown rice
4 cups steamed broccoli florets or green beans (fresh or frozen)
Optional: lemon wedges, sesame seeds

Instructions:

1. Prepare the marinade by whisking together minced garlic, honey, soy sauce, olive oil, lemon juice, paprika, and black pepper in a bowl. Add salmon cubes and gently toss to coat. Marinate for 15 minutes in the refrigerator.
2. Preheat air fryer to 390°F. Arrange salmon in a single layer (avoid overcrowding). Cook for 7–9 minutes, shaking halfway through, until caramelized and cooked through.
3. Cook brown rice according to package instructions.
Steam broccoli or green beans until tender-crisp (about 4–6 minutes) or according to bag.
4. Divide rice, broccoli, and salmon into 4 bowls. Top with any additional red pepper flakes or sesame seeds.

Chocolate Mug Cake

Yields: 2 servings Serving Size: 1/2 cup

Ingredients:

4 Tbsp. (40 g) ground oat flour
1 Tbsp. cocoa powder
1 Tbsp. coconut sugar
1 Tbsp. vegan protein powder
1 tsp. baking powder
3 Tbsp. unsweetened almond or soy milk
2 Tbsp. unsweetened apple sauce or mashed banana
1 Tbsp. ground flax seed (mixed with 2 Tbsp. water)
2 Tbsp. dark chocolate chips

Instructions:

1. In a large microwave safe mug, whisk together the oat flour, cocoa powder, coconut sugar, protein powder, and baking powder.
2. Add in the remaining ingredients (except for the chocolate chips) and stir to combine well. Stir in and top with the dark chocolate chips.
3. Place the mug into the microwave and heat for 30 seconds to start. Allow the mug cake to rest for 10 seconds. Then microwave for at least two or three more 30 second intervals, depending on the strength of your microwave.
4. Allow the cake to rest for 1 minute and top with yogurt, if you desire.

Ingredients:

1 cup uncooked quinoa
2 cups water
1 cup cucumber, chopped
1/2 cup parsley, chopped
1/2 cup mint, chopped
1/3 cup red onion, chopped
1/2 cup roasted pistachios, chopped
1 (15 oz.) can chickpeas, drained and rinsed
3 lemons, juiced
3 Tbsp. extra virgin olive oil
1/2 tsp. sea salt

Instructions:

1. Rinse and drain the quinoa and add to a small pot. Add water to the pot and bring to a boil. Reduce to a simmer, cover and cook for 15 minutes. Fluff with a fork and let cool for 5-10 minutes.
2. In a medium bowl, stir together cooked quinoa, cucumber, parsley, mint, red onion, pistachios, chickpeas, lemon juice, olive oil, salt, pepper, and feta.
