As I checked out these beautiful cuts that we picked up from Oxbow Meats today from a steer we had processed, I can’t help but give myself a pat on the back. This is my reward for almost 2 years of hard work. All the late nights and early mornings were worth it. And here’s the kicker…..

I won’t get to enjoy a single bite.

You see… I spent the last (almost) 2 years of my life caring for this animal because someone trusted me enough to put my beef on their family’s table.

THIS IS MY PASSION. This is what I LOVE to do. This is what I spend much of my time and money doing. All so I can hear someone else tell me that it was the most delicious beef they’ve ever tasted.
