COBB SALAD RECIPE with honey dijon dressing (high protein) πŸ₯—πŸ‘‡ Save this for your next grocery shop πŸ›’

To ensure your salad jars stay fresh, be sure to put the dressing first, followed by the toppings and finally, the lettuce. Keeps in the fridge for up to 4 days.

Salad ingredients: Tomatoes, cooked chicken, cooked bacon, hard boiled eggs, shredded cheese (I omitted this for a dairy-free option), fresh dill, red onion, romaine lettuce. No need to measure these (just follow your heart!!). Place all ingredients in a jar and transfer to a bowl for serving.

Honey dijon dressing ingredients: 1/4 cup olive oil, 1 tbsp dijon mustard, 1/4 cup Apple Cider Vinegar, 1 tbsp honey, 1/4 tsp kosher salt. Place these ingredients in a jar with lid and SHAKE HARD to emulsify!

As a nutritionist I prioritize whole foods over supplements whenever possible, and fermentation is the easiest and cheapest ways to make probiotic foods at home πŸ₯•

This rainbow carrot salad is currently fermenting on my counter, creating all those gut-healthy probiotics our digestive systems crave! Here’s the recipe:

Rainbow carrot salad 🌈πŸ₯•

- 175g (6 medium) carrots
- 1 inch ginger
- 2 cups filtered water
- 15g non-iodized salt

Wash and peel the carrots into ribbons. Peel the ginger into small strips. Dissolve the salt into the water. Add the vegetables and salty water (brine) to a jar. Cover with a glass weight (pickle pebble) and airlock lid (pickle pipe), and store in a cool, dark place for 2-5 days. Cover and refrigerate after fermentation. Enjoy!
