It’s hard to believe this chapter is almost over.

Right now, I’m deep in the reality of trying to recall everything learned over the last 1.5 years — anatomy, pathology, orthopedic testing, treatment planning, rehab, assessments, neuro, ethics, and more.

And if I’m being honest… it feels overwhelming some days.

But looking at this also reminds me of how far I’ve come.

What once felt impossible is now knowledge I use every single day in clinic.

One final push before finals. One step closer to becoming an RMT 🤍

This next chapter feels incredibly exciting, and I’m so grateful for the opportunity to continue growing, learning, and helping people feel their best in a beautiful multidisciplinary space.

The coolest part? No two clients have been the same.

Here is a quick 30 min prep dinner - bake 1 hr then feast!

Ingredients

1 pound spaghetti
4 tablespoons butter
24 ounces marinara sauce, divided
2 teaspoons olive oil
1 cup chopped onion
1 pound lean ground beef
1 pound ground Italian sausage
1/2 teaspoon garlic powder
8 ounces cream cheese, softened
8 ounces cottage cheese
1/4 cup sour cream
8 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Directions
Preheat the oven to 350 degrees F (180 degrees C). Lightly grease a 9x13-inch baking dish.

Bring a large pot of lightly salted water to a boil and cook pasta according to package directions. Drain and return to the pot. Add butter and toss until noodles are well coated. Stir in 1/4 cup marinara sauce.

Meanwhile, heat oil in a large deep skillet over medium-high heat. Add onion and cook, stirring constantly, about 2 minutes. Add ground beef, sausage, and garlic powder; cook, crumbling with a spoon, until browned and crumbly. Drain excess grease and return to the skillet.

Stir in remaining marinara sauce and bring to a simmer. Reduce heat and simmer 5 to 10 minutes.

Mix cream cheese, cottage cheese, and sour cream in a bowl until well combined, set aside.

Add half of the spaghetti mixture to the prepared baking dish. Spread the cream cheese mixture evenly over the top, then layer with the remaining spaghetti mixture. Pour meat sauce evenly over the top and sprinkle with mozzarella and Parmesan.

Bake in the preheated oven until the cheese is browned and bubbly, 35 to 45 minutes Tent with foil halfway though if top begins to get too brown and continue to bake until done.

Let stand for 10 minutes before serving to make it easier to slice.
