Guests often say they haven’t cooked the courgette tart from our book because the recipe doesn’t have a photo. So here’s photos of how to make it. First make the base by pressing in blitzed seeds (pumpkin, sunflower, h**p and Nigella here) and baking for 10mins until the edges brown as per photo. Then press on grated courgette using a fork, add a little soya cream or similar, season and bake until cooked - approx 30mins at 150C.
It’s a tasty nutrient dense lunch, we served it with a butter bean, miso, cabbage warm side dish.
