Sometimes, in the middle of beautiful moments, we forget how quickly everything can change.
The sun is out, the days feel longer, and every free moment becomes a chance to spend time with family, visit beautiful places, and simply enjoy life.
Last weekend we visited beautiful waterfalls in Yorkshire Dales. Between running Kate’s Gluten Free Factory, my gluten-free and sugar-free bakery, and helping my husband with our antique furniture business, weekends are often our little window to slow down and recharge.
Everything felt peaceful.
Until one meal that seemed completely safe changed everything.
As many of you know, coeliac disease can have many faces, and symptoms can hit hard when you least expect them.
The last two days reminded me just how serious the consequences of gluten exposure can be.
Something that seemed harmless turned out not to be safe.
Even after years of living with coeliac disease, moments like this still happen.
Sometimes, it only takes one small thing.
That is exactly why Kate’s Gluten Free Factory means so much to me.
This business was built from personal experience, frustration, and pain, but also from a deep need to create food that people with coeliac disease can truly trust.
Every ingredient matters.
Every supplier matters.
Every process matters.
Because I know first-hand what happens when something goes wrong.
Right now, the only things helping me recover are rest, silence, peppermint tea, chamomile tea… and time.
Summer brings so many beautiful moments, but also so many temptations.
This week reminded me once again that with coeliac disease, being careful is not fear.
It is a necessity 💚
