One of my favorite things about salads is that they travel well.

As long as you wait to dress them, they’re perfect for beach days, road trips, lunches on the go, and barbecues.

Instead of showing up with chips and salsa, you can bring something bright, fresh, and nourishing. The kind of dish that balances out the heavier foods on the table.

As the weather warms up, your digestion may start to shift too.

In Ayurveda, June marks the beginning of Pitta season, the time of year when heat, intensity, acidity, inflammation, irritability, and afternoon fatigue can start to build.

Is salad bad in Ayurveda?

It definitely gets a bad rap.

When I first started studying Ayurveda and learned that we shouldn’t eat cold foods, I ditched salads immediately like the straight-A student I am. But over time, I learned that Ayurveda is not that rigid with food rules.

Everything has the potential to be medicine and everything has the potential to be poison. We always consider who is eating the food, when they’re eating it, and how much they’re eating.

If you’re going to eat salad, this is generally the time of year to do it. In the Eat Fresh Challenge, we’ll make them easier to digest, enjoy them at lunch when digestion is strongest, and use dressings and ingredients that support the gut.

Salad is one of the easiest meals to get creative with.

I think one reason people get bored with salad is that they only know it as lettuce, a few vegetables, and dressing.

But salad is really a canvas.

You can build it around what’s in season, what you’re craving, what digests well for you, and what you already have on hand. Some of my favorite salads don’t even have lettuce in them.

That’s part of what I’m teaching in the Eat Fresh Challenge. Not just recipes, but how to think about salad in a more creative, satisfying way.
