Another yummy, veggie packed dinner! This one was super easy just lots of chopping and it was so good!

Ingredients:
Zucchini
Red onion
Brussels sprouts
Carrots
Chicken sausage
Avocado oil
Garlic
Salt and pepper
Oregano
Thyme
Lemon juice

Preheat the oven to 400. Chop up all the ingredients, add to a pan with seasonings and oil. Bake for about 25 minutes and enjoy!

We devoured these Turkey Wraps! They are paleo, dairy free, sugar free, and full of whole foods! They remind me of the PF changs lettuc wraps but with a little bit of a Thai twist and much better for you! Follow this recipe and see for yourself!

Turkey Filling:
1 lb ground turkey
1–1½ Tbsp avocado oil
3 cloves garlic, minced
1 tsp fresh ginger, grated (or ½ tsp ground)
½ cup shredded carrots
½ cup finely chopped water chestnuts (optional, for crunch)
3 Tbsp coconut aminos
1 Tbsp fresh lime juice
Salt to taste

Toppings:
Butter lettuce or romaine leaves
Sliced avocado
Chopped green onions (optional)
Fresh cilantro (optional)
Lime wedges

Sauce:
¼ cup full-fat coconut milk (from a can)
1½ Tbsp coconut aminos
1 Tbsp fresh lime juice
1 tsp lime zest
1 tsp fresh ginger, grated
1 small clove garlic, grated
1–2 Tbsp olive oil or avocado oil
Pinch of salt (to taste)

Instructions:
1. Heat oil in a large skillet over medium heat.
2. Add ground turkey and cook, breaking it up, until mostly browned (5–7 min).
3. Stir in garlic and ginger; cook 30–60 seconds until fragrant.
4. Add carrots and water chestnuts (if using). Cook 2–3 minutes until softened.
5. Pour in coconut aminos and lime juice. Stir well and simmer 1–2 minutes.
5. Taste and add salt if needed. Remove from heat.

Sauce:
1. Whisk all ingredients until smooth.
2. Taste and adjust lime or coconut aminos as needed.
3. Chill 10 minutes for best flavor (optional).

Get your veggies in in ice cream form! I honestly was so surprised with how good this turned out. We had such a great variety of veggies in this ice cream and really enjoyed it! Let us know if you give it a try!
