9 New Healthy Finds from Costco

Checked out the Costco out West for the first time last week and saw some new to me items I’m excited to try!

1. Chef Hak’s Garlic Roasted Veggies and Quinoa - just add a protein and you’ve got dinner

2. Belgioiso Parmesan Cheese Snacks - 7g of protein in one square, pair with fruit for the perfect snack!

3. Chef Hak’s Red White & Blue Veggies - another super easy weeknight dinner side

4. Maya Kaimal Everday Dal - 3g fiber, 6g protein, great side or base of a meal, just add veggies and chicken

5. Kohinoor Saag Aloo - so many great side dishes on this trip!

6. Beanvivo Seasoned Black Beans - a pantry staple, top with avocado, cilantro, onions or combine with chicken and tomatoes for a balanced meal

7. Felicia Red Lentil Penne - love a protein pasta and this one has 15g protein and 7g fiber per serving

8. Tasty Bite Madras Lentils - 13g protein and 10g fiber per pouch! Another great plant-based proteain meal starter

My top 5 nutrition non-negotiables as a dietitian who just moved across the country in a temporary living situation!

1. Meal prepping - having a few ready-to-eat breakfast items, lunches, or even just some washed produce allows me to throw together easy meals and ensure I’m getting the nutrition I need throughout the week
2. Balanced meals - anchoring meals with protein, a fiber-rich carb, healthy fats like olive oil, and plenty of veggies is a formula I use for the majority of my meals
3. Super simple, go-to meals - major life transitions aren’t really the time to get creative in the kitchen! Leaning heavily on the meals I know work for me: Greek yogurt parfaits, entree salads, orzo salad, salmon with veggies, hummus with crackers and veg
4. Plenty of produce - the incredible farmer’s markets help, but filling my plate with lots of colorful fruits and veggies ensures I’m getting lots of fiber and micronutrients!
5. Hydration - drinking lots of water and sampling different functional beverages to stay hydrated!

I have been loving the food here in San Diego so far!!

So many healthy options, and the produce here is just next level delicious - so flavorful!

Being from New Orleans, I was a teeny bit worried the food would be bland and boring, but that’s not the case at all. Just meals made of simple, high-quality ingredients and lots local produce.

Also shoutout to .powers who whipped up lots of these phenomenal meals in minutes!

Happy Cinco de Mayo! Here’s an easy guacamole recipe to celebrate 🥑💃

Easy Classic Guacamole
3 ripe avocados
1/4 cup red onion, minced
1 clove garlic, grated
1 jalapeño, minced (include the seeds for spicy)
1/2 bunch cilantro, minced
Juice of 1 lime
Salt & pepper
Add all ingredients to a bowl, mash with a fork, serve with your favorite chips, enjoy life!
