🍓🥗 Berry Spinach Salad (perfect for June!)
Fresh, sweet, crunchy, and made with in-season berries + spinach 🌿✨

🥜 Caramelized Pistachios
½ cup pistachios
2 tbsp sugar
½ tbsp butter
⅛ tsp cinnamon
→ Heat 4–5 min, stir constantly, spread on parchment to cool
🥣 Strawberry Poppy Seed Dressing
¼ cup mayo
1 (5.3 oz) strawberry Greek yogurt
2 tbsp sour cream
2 tbsp milk
2 tbsp sugar
1 tbsp apple cider vinegar
1 tbsp poppy seeds
→ Blend smooth, stir in poppy seeds, chill
🥗 Salad
10 cups baby spinach
½ cup strawberries (sliced)
½ cup blueberries
½ cup raspberries
½ red onion (thinly sliced)
1 apple (chopped)
1 kiwi (chopped)
½ cup reduced-fat feta

Toss salad → drizzle dressing → top with pistachios → serve immediately
