🍓🥗 Berry Spinach Salad (perfect for June!)
Fresh, sweet, crunchy, and made with in-season berries + spinach 🌿✨
⏱️ 20 mins total

✨ Why you’ll love it:
Peak-season berries = sweeter flavor, better texture, and less need for added sugar 🙌

🥜 Caramelized Pistachios
½ cup pistachios
2 tbsp sugar
½ tbsp butter
⅛ tsp cinnamon
→ Heat 4–5 min, stir constantly, spread on parchment to cool

🥣 Strawberry Poppy Seed Dressing
¼ cup mayo
1 (5.3 oz) strawberry Greek yogurt
2 tbsp sour cream
2 tbsp milk
2 tbsp sugar
1 tbsp apple cider vinegar
1 tbsp poppy seeds
→ Blend smooth, stir in poppy seeds, chill

🥗 Salad
10 cups baby spinach
½ cup strawberries (sliced)
½ cup blueberries
½ cup raspberries
½ red onion (thinly sliced)
1 apple (chopped)
1 kiwi (chopped)
½ cup reduced-fat feta

✨ Assemble:
Toss salad → drizzle dressing → top with pistachios → serve immediately

Here are some of the BIGGEST fiber hitters to level up your intake without overthinking it:

🥄 Chia seeds → ~10g in 3 tbsp
🍲 Lentils → ~15g per cup
🫘 Beans → ~12–15g per cup
🫐 Raspberries → ~8g per cup
🟢 Split peas → ~16g per cup (underrated)

⚠️ Pro tip: don’t go from 0 → 100
Increase slowly + drink water to avoid bloating
