Hereโ€™s where American beekeepers get the short end of the stick.

Itโ€™s virtually impossible for us to earn an organic label because we canโ€™t control where our livestock forage. ๐Ÿ

But importers of foreign honey often can. They bring in cheap imported honey, put an organic label on it, and sell it for a premium. ๐Ÿ’ฐ

So when you buy honey from your local beekeeper, youโ€™re supporting someone whoโ€™s doing everything they can to produce a high-quality product even if the rules make it nearly impossible to put that label on the jar.

But when you really understand what honey is and what it takes for bees to make it, that simple jar becomes pretty incredible.

Honey starts with something completely different.

Nectar.

A forager visits flowers, collects nectar and carries it back to the colony.

And that's just the beginning.

๐——๐—ถ๐—ฑ ๐˜†๐—ผ๐˜‚ ๐—ธ๐—ป๐—ผ๐˜„?
โ€ข Honey isn't simply nectar stored in a cell, bees add enzymes and repeatedly process the nectar as it moves through the colony.
โ€ข Bees remove much of the water from nectar, workers spread it through cells and fan their wings to help evaporate moisture.
โ€ข Once properly ripened, honey's low moisture, acidity and chemistry make it difficult for many microorganisms to grow.
โ€ข Properly stored honey can remain stable for an incredibly long time.
โ€ข Honey can crystallize, sometimes quickly, sometimes slowly, depending largely on its sugar composition and storage temperature.
โ€ข Crystallized honey isn't spoiled honey, it's a completely natural process.
โ€ข Different nectar sources produce different honey, changing the color, aroma, flavor and even how quickly it crystallizes.
โ€ข Honey contains sugars, organic acids, enzymes and numerous plant-derived compounds.
โ€ข Honey also has antimicrobial properties, which is one reason specially prepared medical-grade honey is used in certain types of wound care.

And here's something we sometimes forget...

No single bee makes your jar of honey.

Thousands of bees contribute.

Foragers collect nectar.

House bees receive and process it.

Workers move it between cells.

Bees regulate the environment inside the colony.

Others fan their wings to help remove moisture.

Eventually the finished honey is capped beneath a thin layer of beeswax.

What looks like a simple jar sitting on a shelf represents thousands upon thousands of flower visits and the combined work of an entire colony.

Raw honey hasn't been subjected to the high-heat processing sometimes used in commercial honey production.

Depending on how it's handled, it can retain pollen, enzymes, aromatic compounds and tiny particles of beeswax naturally associated with honey from the hive.

That's also why two batches of local honey may not look or taste exactly alike.

Different flowers.
Different weather.
Different seasons.
Different locations.

Honey is a snapshot of what was blooming in the area when the bees made it.

The next time you open a jar of honey, don't just see something sweet.

See flowers.
See thousands of flights.
See thousands of bees working together.
