Did you know that if you’re following a low-FODMAP diet for IBS, you may still be able to enjoy garlic or onion-infused oil? Garlic and onions dissolve in water- not oil. That means their flavour can infuse into oil without bringing most of those fermentable carbohydrates along. So you can get all the same garlic or onion flavour but without the FODMAPs.

INGREDIENTS
1/4 cup of olive oil
4-5 garlic cloves or half an onion chopped

METHOD
-Peel the garlic cloves to remove their skin
-Pour the olive oil into a small sauce pan and add in the garlic/onion.
-Bring to a simmer so the oil is bubbling
-Remove from the heat
-Let sit for a couple hours or in the fridge over night.
-Strain into a jar or bottle for storage and discard the cloves/ onion.
-Store in fridge for up to 4 days
