Lentil and Kale Stew Recipe
Ingredients:
-1 Cup of washed and chopped Kale (Tuscan Kale preferred but any kind fine)
-1 Cup of dry lentils (I used red lentils for this dish but any dried lentil fine)
-1 Tablespoon of tomato paste
-1 chopped fresh garlic clove
-1 Tablespoon of chopped ginger root (substituting ginger powder is fine)
-1 ½ Cups of water
1 Tablespoon of olive oil. ½ Teaspoon of olive oil for drizzling (optional)
-Red pepper flakes (optional)
-Sea salt
-Ground pepper
-1 teaspoon of curry powder
-1 teaspoon of cumin powder
-1 teaspoon of onion powder
-1 teaspoon of chili powder
Lentil Stew Recipe:
1-Heat 1 Tablespoon of olive oil in a medium pot over low to medium heat
2- Add spices, ginger and garlic to the oil and stir to ensure garlic and ginger infuses with the spices
3-Add lentils and coat beans with the spices, oil, ginger and garlic
4-Mix in tomato paste
5-Add in water and sprinkle beans with sea salt and pepper. Note: Water should cover the beans
6-Increase heat to high to bring beans to a boil
7-Once beans are brought to a boil, lower heat to simmer and cook on low/simmer for 20 minutes
8-Add in chopped kale and mix. May sprinkle more sea salt and pepper. Continue to cook beans until tender which should be an additional 15-20 minutes
*Optional: Can top lentils with red pepper flakes and/or can drizzle ½ teaspoon of olive oil
