Cheesy Keto Cowboy Casserole 🧀🥩
Ingredients
Serves 6 | ∼6g net carbs per serving
1.5 lbs ground beef, 80/20 for best flavor
1 lb green beans, fresh or frozen, trimmed and cut into 1-inch pieces
8 oz cream cheese, softened
1/2 cup heavy cream — makes it extra luscious
1 cup shredded sharp cheddar cheese, divided
1/2 cup shredded mozzarella — for that epic cheese pull
1/4 cup grated parmesan — adds salty depth
3 cloves garlic, minced
1 small onion, diced — about 1/4 cup
1 tsp onion powder
1 tsp smoked paprika
1 tsp salt + 1/2 tsp black pepper
2 tbsp butter — for sautéing
Easy Steps
Preheat & prep: Set oven to 375°F. If using fresh green beans, blanch them 2 mins in boiling water then drain. Frozen? Just thaw and pat dry.
Brown the beef: In a large skillet, melt butter over medium-high heat. Add onion and cook 2 mins. Add ground beef, breaking it up. Season with salt, pepper, onion powder, and paprika. Cook until no pink remains. Drain excess grease.
Make it creamy: Reduce heat to low. Add garlic and cook 30 seconds. Stir in cream cheese and heavy cream until melted and smooth. Fold in green beans and half the cheddar.
Assemble: Pour the mixture into a 9x13 baking dish. Top with mozzarella, parmesan, and remaining cheddar.
Bake to bubbly: Bake 18–22 mins until hot and the cheese is melted and golden on the edges.
Rest & serve: Let it sit 5 mins so it sets up. Then scoop and watch that cheese stretch.

Cheddar-Stuffed Meatballs

Juicy, cheesy, low-carb

Ingredients (Makes about 18–20 meatballs)

1 lb ground beef (80/20 works best)

1 egg

¼ cup grated Parmesan

2 tbsp almond flour

1 tsp garlic powder

1 tsp onion powder

½ tsp salt

½ tsp black pepper

½ tsp paprika (optional)

3–4 oz cheddar cheese, cut into small cubes

Instructions
1. Prep

Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.

2. Mix

In a bowl combine:

Ground beef

Egg

Parmesan

Almond flour

Garlic powder

Onion powder

Salt & pepper

Paprika

Mix gently until just combined. Don’t overwork the meat.

3. Stuff

Scoop about 1½ tablespoons of mixture.
Flatten slightly in your hand.
Place a cube of cheddar in the center.
Seal meat around the cheese and roll into a ball.

Place on prepared baking sheet.

4. Bake

Bake 15–18 minutes, until browned and cooked through.

For extra browning, broil 1–2 minutes at the end.
