Chronically Healthy LLC was created to help everyone dealing with a chronic illness to become chronically healthy through functional medicine principles. Dillon and Erica have each had to overcome their own debilitating chronic illnesses and it is their experience that motivates them to empower others to take back control of their health. Their knowledge and passion for health, nutrition and education along with their experience of working with over 100 clients allows them to create powerful, sustainable changes in the clients they work with.

A lot of what we do for our clients happens when they aren’t in the room.

It’s the early mornings reviewing information before the day starts.

The late nights researching a question someone asked us.

Looking back through labs. Revisiting a plan. Reading new research. Talking through a difficult case. Trying to figure out what piece of the puzzle we may be missing.

Our clients may never see those hours—and that’s okay.

Because when someone trusts Chronically Healthy with something as important as their health, we take that responsibility seriously.

We want our clients to know that when they leave an appointment, we don’t simply stop thinking about them until the next one.

There are real people behind every lab report.

People who want their energy back.

We need to stop thinking about food only in the context of weight gain or loss!!

Especially if you’re dealing with a chronic illness…

This belief that food either made me gain or lose weight but had no other effect on my health is what kept me sick for 10 years!

Here’s the truth…food healed me. Yes, food!

Getting rid of inflammatory food and eating whole nutrient dense foods gave my body what it needed to heal and I have been in complete remission from Still’s Disease for 10 years 🙌

And it completely changed how I think about these “incurable” chronic diseases and is what made me dive head first into functional medicine.

For some people, it may not be as simple as changing their diet. We may need to look deeper into the gut and look for chronic infections that are keeping them sick. And that’s ok!

That’s part of the process of addressing the root cause instead of chasing and suppressing symptoms!

What’s in my cart? 🥩

Today I’m taking you through a grocery haul from Sprouts while following a carnivore diet.

As someone living with Type 1 Diabetes, I’m always experimenting and tracking my results—not just how I feel, but what my continuous glucose monitor (CGM) and insulin requirements are telling me.

Since transitioning to a carnivore diet, I’ve seen some incredible changes for me:

📉 Averaging only 30 units of insulin per day
📊 Average blood glucose under 130 mg/dL
⚡ More stable energy throughout the day
🧠 Better mental clarity
📈 Far fewer blood sugar swings

For me, eating primarily animal-based foods has made it much easier to maintain stable blood glucose levels because I’m avoiding the large glucose spikes that often require higher insulin doses. Fewer spikes means fewer corrections, less variability, and a much more predictable day.

Now, this isn’t me saying everyone needs to eat carnivore. Nutrition isn’t one-size-fits-all. But after years of battling blood sugar fluctuations, this approach has been one of the most effective tools I’ve personally found for improving my glucose control and reducing my insulin needs.

The biggest takeaway?

Track your data. Test different approaches. Find the foods that help your body thrive.

Diabetic diagnosis were the best things to ever happen to me."

I have a sad story too.
Most people do.

But sometimes the pain, the diagnosis, the heartbreak, the failure, or the rock bottom becomes the wake-up call that saves your life.

Don't let your story become your excuse. Let it become your turning point.

Don’t let the fear of change keep you from healing!

The number one reason why most people don’t take the first step towards healing is that the fear of change (changing eating habits, working out, dialing in sleep) is greater than the fear of staying the same (sick, tired, and in pain).

But think of it this way, what do you really have to lose? Let’s say you make big changes, big moves towards your health goals, go 💯 for 1 month…and nothing changes. (Highly unlikely, but let’s just pretend for the example) What did you really lose? If it’s really terrible and you don’t see any benefit, you could always go back to what you were doing before…

But don’t steal your body’s chance to really thrive over the fear of change.

Take the first step already! What do you have to lose?

“I switched to chicken because it’s healthier.”

I hear this all the time—and I get why so many people have been misled.

We’ve been taught to prioritize low fat instead of nutrient density.

🍗 Chicken is a great protein source
🥩 Grass-fed beef is a great protein source plus iron, B12, zinc, and hormone-supporting nutrients

So when you remove beef completely…
you’re not upgrading your health—you’re often creating nutritional gaps.

This isn’t about avoiding chicken.
It’s about not replacing one of the most nutrient-dense foods with something less complete.

Stop letting “low fat” define healthy.
