Community Cultures Community Cultures offers fermentation education through in-person and virtual workshops, as well as larger international events.

Community Cultures provides Fermentation Education opportunities throughout the Pittsburgh, Pennsylvania region. Since the Covid-19 pandemic, workshops are also now offered virtually. The goal is to make fermentation education accessible to all through affordable workshops.

New product alert! meet Spring Shiitake Kimchi

Over the last year you may have seen Gabby at the Lawrenceville Market, or covering our table at Bloomfield. Throughout the winter she's also helped me process and ferment the bounty of local produce from autumn and winter. She also loves kimchi (and makes great kimchi, btw) AND mushrooms!, Sadly, she's moving out of Pittsburgh in June 😒
When I learned that she is moving I asked her if there were any products she'd like to make before departing, and, like any groovy human, mushroom kimchi was at the top of her list. So here it is--an ode to Gabby and the vibrant, thoughtful and passionate work she's brought to Community Cultures.
Spring Shiitake Kimchi (Vegan): local shiitake mushrooms married with julienned carrots, scallions, garlic, ginger, gochugaru, mushroom broth, apple, and salt. This is an extraordinarily small batch, and expensive, because we all know how mushrooms shrink down....but we plan to make future batches, perhaps with other seasonal veggies mixed in to bring down the cost. Gabby will also be covering our table at Bloomfield so you can buy this special product from the maker herself!

Bloomfield menu is up for Saturday! Pine soda is back, but just spruce flying solo (sorry, eastern hemlock and white pine, it's time for spruce to shine). Nettle garlic cashew spread is back! This one might be the last batch before we move into the next seasonal herb/veg cashew spread.

It might be rainy and chilly tomorrow, but us vendors will be there...waiting for you... just like those groundhogs are waiting for you to plant your garden!

The vibrant rhubarb has arrived, juiced and fermented with all its lovely fibrous being! And the last of our frozen paw paws - from - have been processed into our last soda. This time we threw in some mugwort to add a touch of bitterness (the tropical paw paw still dominates of course, but the subtlety of the mugwort adds a nice complexity). We have so many other goodies! Come out and enjoy the nice weather!

I just unburied these old labels from 2021 as I was washing the bottom of the returned bottles pile!
Back in 2021 I created a Soda CSA--porch pickup and deliveries only, in typical pandemic fashion. The program allowed me to experiment, do R&D, play with flavor and local ingredients, and learn from my members' occasional living room explosions. Two years later I popped up at the Bloomfield Market to sell these fermented sodas, with great support (aka free labor at the time) by my partner .canose . Jess also brought the artistic flare that I didn't have, with more appealing handwriting and an eye for design. Soon enough, by the end of 2023, we transitioned out of fully handwritten paper labels, into the bubbly blue stickers you see today.
Handwriting our flavors is a representation of our micro batches, commitment to the spontaneity of fermentation (I often don't know my menu until the week of!), and ability to reuse labels and bottles more easily. It reduces waste, which we're proud of. It's also super tedious! Ensuring bottles are clean and sanitized, and labels are erased, entails hours of labor each week. We're working on some new label designs to help highlight our variety of product offerings.
I want to highlight that this business is about breaking the mold (especially in the world of business) and seeing what is possible when preserving the seasons of our local landscape, while serving our community. How can we resist growth, while also making a living? This year we'll be popping up at more markets and events, but we're still committed to the craft of micro batches with fun, vibrant, seasonal flavors. Handwritten labels is part our brand (it's not a hobby)...and it's a labor of love πŸ₯°

We were able to sneak out our popular Relax, Mom soda early this year, in time for Mother's Day! With aged, rose-infused honey (with 2025 rose from ) and cardamom, it's a soothing and pleasantly refreshing flavor for those moms..and anyone adjacent to a mom (...all humans, really). Plus, western PA forest soda is back, packed with mushroom medicine and forest flavors! We have a few bottles of paw paw and pine soda left--just ask for the reserved bottles before they slip out. The fermented veg and condimens live on, bringing you the preserved flavors of fall and winter. See yinz at Bloomfield, rain or shine!
