Cooking always tells on you.

Our Chicken Salad has been one of the most loved dishes on the cart — organic, clean, packed with flavour. And yet every time Jan tastes it, she says the same thing: “It’s missing something. It needs more oil-shine.”

She’s right, and it took me a while to understand why.

Some cooks are bold by nature — generous with oil, generous with layers of flavour, everything glistening and alive on the plate. Others, like me, tend toward restraint. Precise. Balanced. Correct.

But correct isn’t always the same as irresistible. And the way we cook often says more about who we are than we realise.

So today I revisited the chilli oil — our homemade chilli oil, made with organic cold-pressed olive oil. This isn’t just a condiment. It’s the soul of the dish, the base everything else builds on. I made it bolder, richer, more generous than before.

Our olive oil is organic and cold-pressed — not cheap, which is exactly why I’d been holding back. But some things are worth the extra.

The Free Range Chicken Salad, now with a little more boldness, a little more shine, a little more soul.

Come taste the difference. 🌿

Your skin isn’t a surface problem.

It’s a gut problem.

Acne, eczema, rosacea, premature lines — no matter what you put on them, they keep coming back. Because your skin isn’t talking to your bathroom cabinet. It’s talking to your gut.

Here’s what’s actually happening, layer by layer.

Layer 1 — Your microbiome is your skin’s first mirror
When gut bacteria are out of balance, inflammation rises — and your face is the first place it shows. Fermented foods, prebiotic fibre, live cultures are what this layer needs.
Layer 2 — Undigested protein becomes inflammatory fuel
When digestion is compromised, protein fragments ferment in the wrong place, producing compounds that trigger skin reactions from the inside out.

At P44: 12-hour bone broth, slow-cooked butter chicken, Barra fish — gentle, bioavailable, easy on this layer.

Layer 3 — Chronic inflammation keeps skin in emergency mode
Ultra-processed food, chemical additives, ongoing stress — they keep your immune layer on permanent alert. Your skin, as your largest organ, carries the visible cost.

Layer 4 — Your gut barrier is your skin barrier
Leaky gut and compromised skin barrier are not separate conditions. They are the same condition at different layers of the same system.

This is where collagen actually matters — not as a trend, but as real barrier repair.

Your skin is asking for something.

Not another serum.

One layer deeper. Start there. 🌿

The 12-hour bone broth is ready and still steaming. It has been waiting for you since last night—patient, golden, and quietly extraordinary. This morning, it reached that perfect point where you lift the lid and just stop for a second to take it all in. 🥣
The lamb is on the stove right now, slow-braising in deep spices and broth. The whole kitchen smells like something truly worth coming for.
For something fresh and vibrant, our free-range chicken is being pulled by hand right now for today’s salad. And our Radish Kimchi Salad is freshly mixed—crafted with crisp apple, pear, onion, garlic, our Active Curcumin Elixir, and coconut fish sauce. It is alive, tangy, and perfectly ready to nourish you. 🥗
Everything is made this morning.
Everything is waiting for you.

Food is our medicine🌿

Yesterday, we had a conversation at the our food truck that perfectly captured exactly why we do what we do at Private Kitchen 44.

A mother stopped by to pick up some food and a bottle of our Active Curcumin Elixir. She shared an incredible story about her son, who recently suffered a severe bone fracture and had to be put in a cast.
The original plan from the hospital was a long 14-week recovery in the cast. But during his recovery, he committed deeply to eating clean, gut-friendly foods and consistently taking our Active Curcumin Elixir.
The result? The doctors were absolutely amazed. His fractured bone healed in just about half the expected time!
Stories like this remind us of a fundamental truth: when you stop feeding your body inflammatory ingredients (like seed oils and heavily processed foods) and start giving it bioavailable, anti-inflammatory nutrients , you allow your body to do its most important job. Instead of fighting the food you eat, it redirects all of its energy toward repairing, rebuilding, and healing. ✨

We are so grateful to be a small part of his healing journey. If you need some restorative, functional comfort food to fuel your own body today, our kitchen is fired up and ready for you! 🦋

One question we hear every single day at the cart:

"What should I eat for a healthy gut?"

Here's the honest answer — it's not one food, one supplement, or one rule. Your gut runs on four layers, and all four need to be fed.

Layer 1 — Your Microbiome
The living ecosystem inside you. When it's balanced, it ferments food into postbiotics that travel all the way to your brain — regulating mood, sleep, and energy. When it's off, you feel it everywhere: bloating, brain fog, anxiety, poor sleep.
What feeds it: fermented foods, fibre, diversity.

Layer 2 — Your Enzyme & Digestive Layer
This is where food gets translated into something your cells can actually use. Without enough digestive enzymes, even the best food becomes a burden — undigested proteins ferment in the wrong place, producing gas, odour, and inflammation.
What supports it: slow cooking, warm broths, real whole foods.

Layer 3 — Your Immune Recognition Layer
70% of your immune system lives here. This layer decides what's friend and what's threat. Chronic stress, ultra-processed food, and chemical additives keep this layer in a permanent state of low-grade alert.
What calms it: clean ingredients, no additives, anti-inflammatory foods.

Layer 4 — Your Gut Barrier
The final gate. When it's intact, nutrients get in and toxins stay out. When it breaks down — what we call leaky gut — everything leaks through. This is where chronic inflammation begins.
What rebuilds it: collagen, gelatin, slow-cooked bone broth.

This is exactly why every dish at Private Kitchen 44 is designed around these four layers.

The 12-hour bone broth isn't just flavour — it's Layer 4 repair.
The kimchi isn't just a side — it's Layer 1 fuel.
The slow-cooked proteins aren't just filling — they're Layer 2 support.
The clean, chemical-free ingredients aren't just a preference — they're Layer 3 protection.

Real food. Built with intention.

The Real Reason You Feel Tired After Meals: Hidden Gut Inflammation

Many of us know the feeling: you finish a hearty lunch, but instead of feeling energized, you feel sluggish, heavy, and ready for a nap. It’s easy to blame it on a standard ”food coma“ or blood sugar spikes, but often, the real culprit is ”hidden inflammation“ in your digestive tract.
The delicate lining of our gut takes a heavy hit from common elements in modern diets, such as gluten, dairy, and highly processed plant oils. When your digestive system has to work overtime to process these irritants, it can trigger a mild immune response. This internal battle consumes a massive amount of your body‘s energy, naturally leaving you feeling exhausted.
Breaking this cycle comes down to two core principles: reducing inflammation and repairing the gut lining.
Alongside minimizing common dietary triggers, it’s crucial to incorporate high-quality, anti-inflammatory fats (like cold-pressed olive oil) and collagen-rich foods into your daily routine. A perfect example is natural bone broth, slow-simmered at a low temperature for over 12 hours. This long extraction process releases highly bioavailable amino acids—like glutamine—and gelatin. Think of it as a natural ”liquid band-aid.“ It gently coats, soothes, and nourishes the damaged gut wall, giving your digestive system a much-needed environment to heal and rest.
If you don‘t have the time to prep these meals yourself, welcome to our food truck! All the food we serve here is specially designed to help you eliminate inflammation and soothe your digestion.
