Crispy Chickpea & Roasted Broccoli Salad 🥦✨

A flavorful, protein-packed salad with crispy chickpeas, roasted broccoli, greens, and a naturally sweet citrus dressing.

Ingredients

Roasted Broccoli
• 1 large head broccoli (~500g), cut into florets
• 3 tbsp extra virgin olive oil
• 2 tsp salt
• 3 tsp garlic powder

Roasted Chickpeas
• 500g chickpeas, drained and rinsed if canned
• 1 tbsp extra virgin olive oil
• 2 tsp paprika
• 1/4 cup nutritional yeast

Dressing
• 3 tbsp olive oil
• 1 tsp salt
• 2 dates, pitted
• 1 clove garlic
• 3 tbsp lemon or lime juice

To Finish
• 2–3 cups arugula or chopped kale

Instructions

1. Preheat oven to 400°F (200°C).

2. Roast the broccoli
Toss broccoli with olive oil, salt, and garlic powder. Spread on a baking sheet and roast for 10–15 minutes until browned and slightly crisp.

3. Roast the chickpeas
Lightly mash chickpeas for texture. Toss with olive oil, paprika, and nutritional yeast. Spread on a baking sheet and roast alongside broccoli for 10–15 minutes until warm and crispy.

4. Make the dressing
Blend olive oil, salt, dates, garlic, and citrus juice until smooth.

5. Assemble
Let roasted ingredients cool slightly. Toss broccoli and chickpeas with greens and dressing until combined.

Makes 3–4 servings 🤍
