My name is Katie and I have been an ACE certified personal trainer since 2008 and I became a certified health coach in 2020. I've always been passionate about exercise and fitness and finding ways to incorporate that into my daily life. It helps that I truly love all shapes and forms of exercise (think hiking, boxing, HIIT, yoga, running, traditional strength training... all of it!)

ade the realization that animal products were not the healthiest option for me and I've since transitioned to a primarily plant based diet since then. Then, in 2022, my husband and I bought a 25ft Class A motorhome that we absolutely adore! Now, I wouldn't say that we are "full time" RVers, but, we do travel a LOT. So, this page is a how I fit traveling in a motorhome, eating a plant-based diet and staying on top of my fitness all together in a crazy life! Why compost?
According to the EPA more than half of landfill methane emissions come from wasted food. Composting foods helps to reduce emissions and improve soil quality.

I try to reuse those food scraps first by making veggie broth. Things like onion and garlic peels, carrots and celery, tomatoes and bell peppers, leftover herbs, and even mushrooms are great in a veggie broth. I keep a freezer bag in the freezer and add in any leftovers ends or peels to the bag. Once its full, dump that freezer bag in a pot, add water, and let it simmer for as long as you want! Drain and store the liquid in the fridge or freezer!

Cruciferous veggies like cauliflower, brussel sprouts and broccoli aren't recommended along with potato peels. They can create a bitter flavor or murky appearance. So, they go right into the compost bag.

You can compost more than just your fruit and veggie scraps. Think coffee grounds, tea leaves, and egg shells.

Okay, I’m just gonna share this here because, how sweet! ❤️ I had the honor of subbing 7 weeks this summer for the city of Scottsdale at one of the recreation centers… and I like a good theme. So, we did a 7 week series featuring different parts of the body and highlighting both alignment and how they work to propel us forward while keeping us stable and grounded. I would love to offer this again, either in person or virtual! Let me know if you’d be interested.
