High-Protein Tomato Soup 🍅✨
20g protein | 10g fiber
(serves 1)

1½ tbsp olive oil
½ white onion, finely chopped
1 tbsp tomato paste
1 (15 oz) can crushed tomatoes
1 cup bone broth
1 tsp Italian seasoning
¼ tsp kosher salt
½ cup cottage cheese (you can add more if you want to increase protein)

Warm olive oil in a pot over medium-low. Add onion and cook until soft, about 4–5 minutes

Stir in tomato paste and cook 1 minute, breaking it up

Add crushed tomatoes, bone broth, seasoning, and salt. Bring to a simmer and cook 6–8 minutes

**if you don’t have an immersion blender**
Scoop about ½ cup of the soup into a blender with the cottage cheese and blend until smooth. Let the soup cool slightly, then stir the creamy mixture back into the pot. Simmer on low for another 5 minutes until everything comes together.

**if you DO have an immersion blender**
you can add the cottage cheese directly to the pot and blend it in. Just make sure you let the soup cool slightly first so it doesn’t separate
